Southern Yam Latkes


NOTE: you can incorporate sweet corn, fish, crab, shrimp, or chicken, zucchini, or whatever into these sweet potato latkes. 

1. Boil 4 sweet potatoes, shred, put in a bowl. 
2. combine with 1 finely chopped sweet vidalia onion, 2 cloves minced garlic, 1 teaspoon chipotle seasoning or chili powder, 1chopped habanero or jalapeno for less spicy, salt, pepper, 1 egg yolk, 2 tablespoons breadcrumbs. [add more egg and breadcrumbs if using extra veggies or meat]
3. form into patties.
4. bake for 30 minutes flipping once halfway, drizzled with olive oil
OR fry until golden and crispy with olive oil.
5. top with avocado, cilantro, and tomato salsa.

PAIR WITH: a nice refreshing beer, or course!
