Feta Cheese Appetizers

Everyone loves feta cheese! So stock up and make some great snacks/appetizers/ etc.

MINI BIFTEKI:
mix together 500 grams ground meat [beef, lamb, or chicken] with 1 egg and 1/4 cup breadcrumbs, some garlic, oregano, and pepper.
flatten into patties, place a chunk of feta cheese inside. 
roll into balls. grill, bake, or fry.

BAKED FETA IN TOMATO SAUCE: 
In a baking dish, place a thin layer of tomato sauce or crushed tomatoes.
Place feta. Season with lemon juice, olive oil, pepper, oregano, and garlic. 
Bake for 15-20 mins at 350 F.

MINI PITA BRUSCHETTA: 
Mix together 1/2 cup crumbled feta with some spinach, oregano, lemon juice, olive oil, garlic, pepper, and fresh basil. 
Put on pita, bake for just about 10 mins to warm up and make crispy. 

GREEK SALAD SKEWERS: 
Get toothpicks. 
Skewer a chunk of feta, cucumber, and tomato. 
Drizzle with olive oil, oregano, lemon juice, and garlic [greek dressing]

FETA & BACON STUFFED MUSHROOMS: 
Prepare bacon, drain and cool, crumble.
Mix with crumbled feta, fresh parsley, garlic, pepper, oregano. 
Stuff into mushrooms, top with breadcrumbs, bake for 15-20 mins.

ZUCCHINI CUPS WITH FETA, TOMATO & PINE NUTS:
Slice zucchini, hollow out middle.
Chop up tomato, feta into chunks, add pine nuts, a bit of olive oil, garlic, pepper, oregano.
Stuff and serve!

FETA LASAGNA CUPS:
boil lasagna noodles briefly.
Fill with tomato sauce, ground meat, feta, and parmesan. season with chives or fresh parsley, bake for 15-20 mins. 

MARINATED FETA & OLIVE SKEWERS:
Marinate chunks of feta and olives with tomatoes, garlic, onion, oregano, pepper, red pepper flakes, balsamic vinegar.
Skewer and serve!

ZUCCHINI & FETA FRITTERS:
In a bowl, mix together 1/2 cup shredded zuchini, 1/2 cup shredded potato or yam, 1 egg, 3 tablespoons crumbled feta, and breadcrumbs. 
season with pepper and oregano and garlic, to taste.
form into balls. fry or bake! serve with tzatziki.

FETA GARLIC BREAD:
Melt some butter, add lots of minced garlic. 
Slather on sliced bread, with pepper, parsley, a slice of tomato for good measure, and some feta.
Bake for 10 mins. 

FETA BASIL & PROSCIUTTO WRAPS
Get some nice prosciutto or ham.
thinly slice a chunk of feta, pair with a leaf of fresh basil, wrap
serve!


FETA DIPS:
Feta with Roasted Red Peppers, Garlic, Olive Oil & Lemon Juice
Chickpeas, Lemon Juice, Garlic, Tahini, Cumin & Feta
Feta & Kalamata Olive
Basil Pesto & Feta
Tomato & Feta with garlic and basil
Artichoke, Spinach & Feta
Sun Dried Tomato, Feta & Garlic
Sour Cream, Onion & Feta
Greek Yogurt, Lemon, Cucumber Garlic, & Feta

SPANAKOPITA MUSHROOMS:
stuff mushrooms with cooked spinach, garlic, feta, lemon juice mix.
You can wrap in a Phyllo pastry before baking, if you want.
FETA & WATERMELON BITES:
Get watermelon, hollow out.
Fill with a mix of cucumber, feta.
Cool and refreshing.


TOMATOES WITH FETA & OLIVES
slice tomatoes, top of chopped olives and crumbled feta, garlic-olive oil and balsamic vinegar. 

SPINACH, ASIAGO & FETA DIP
A blend of cheeses, mix together cooked spinach with 1/4 cup sour cream, 3 tablespoons crumbled feta and 1 tablespoon grated asiago, lemon juice and garlic. 
Bake for 10 mins. 


FETA PINWHEELS:
Mix 1/4 cup crumbled feta with 1/4 cup low fat sour cream. Add garlic and oregano.  Wrap in a tortilla with: 
Dried Cranberry, Green Onion & Feta 
Avocado, Tomato & Feta
Basil, Tomato & Feta
Olive, Cucumber, Tomato, & Feta
Ham, Spinach & Feta
Egg Salad, Tomato, & Feta
Bacon, Mushroom & Feta
Red Peppers, Feta
\Pepperoni, Mushrooms, Green Pepper & Feta
Sour Cherries, Balsamic & Feta

SPANAKOPITA BITES:
Get phyllo pastry.
Make a mixture of feta, lemon juice, garlic, boiled spinach.
Stuff, wrap in phyllo.
Coat with a bit of olive oil, bake for 15-20 mins until crispy. 

PAIR WITH: your choice. something sweet to counter the salty feta!
