Minted Lamb Burgers/Pitas




Oh wow! This is a zesty and flavourful take on a burger. Best ever. 

YOU NEED:
pitas or burger buns
500 grams ground lamb
1 egg
a bit of breakdcrumbs
3 cloves minced garlic
a handful chopped mint
salt, pepper, cumin to taste

TOPPINGS:
tomato
onion 
feta or goat cheese
fresh mint

make patties. 
grill or fry.
assemble burgers on warm bread

serve!












Marinated Greek Salad

Very easy, but you have to eat it the next day!

YOU NEED:
1 cup boiled pasta
50 grams or so feta cheese
1 chopped bell pepper
1 chopped cucumber
a handful sliced kalamata olies
a bunch of cherry tomatoes

MARINADE:
1/4 cup olive oil
1/4 cup lemon juice
a bit of red wine or balsamic vinegar
oregano
4 cloves garlic
salt, pepper

assemble and eat the next day!

Gyros

So meatloaf is gross, but try this! 

YOU NEED:
1 pound ground lamb, beef, pork, or a mix
3 cloves minced garlic
1 teaspoon dry oregano, 1.2 each cumin, salt, pepper, thyme, basil
1 egg
1/8 cup breadcrumbs

MASH INTO A PULP.
form into a loaf. bake for 30 mins to an hour depending on how thick it is. 

MAKE A SANDICH.
slice loaf thinly.
top with: tomato, onion, lettuce, tzatsiki, olives, hummus, parsley,  feta, etc

Meditteranean Shrimp & Feta Mac and Cheese

A twist on mac and cheese!

YOU NEED
oven, preheated to 400 F
12 cooked peeled shrimp
1 cup pasta
1/2 cupfeta cheese
2 cloves garlic
1/4 cuplemon juice
1 cup greek yogurt
italian breadcrumbs
oregano

1. get a greased or lined baking dish, preheat oven
2. cook shrimp and pasta, seperately. shrimp can be bought precooked, or boiled.
3. toss shrimp and pasta with yogurt, garlic, lemon juice, and half the feta cheese. 
4. put in baking dish, top with breadcrumbs and more feta, seasoning like oregano
5. bake for 30 mins or so until top is browned.

Chickpea Meditteranean Salad

Ahh this is an amazing twist on greek salad. 


YOU NEED:
lettuce, as a bed. 
1 can chickpeas, drained
1 cucumber, peeled and diced
1 red onion
a few chopped sundried tomatoes, or 1 fresh tomato, cubed
some olives, chopped
feta cheese, crumbled

VINAIGRETTE:
juice of 1 lemon
3 tbs lemon juice
salt, pepper
1 large clove garlic
oregano

Blood Orange Greek Salad

Easy start to your meditteranean feast.
YOU NEED:
3 blood oranges, peeled and sliced
100 grams crumbled goat or feta
some sliced olives

DRESSING:
2 tbs lemon juice
2 tbs olive oil
1 large clove minced garlic
salt, pepper, oregano

OPTIONAL: grilled chicken, fresh oregano, fresh basil. grilled veg

Pasta E Olio, Meditteranean Style

Mmmm. 

YOU NEED:
1 cup cooked fettucine
sliced olives, green and kalamata
some cherry tomatoes
OPTIONAL: zucchini, eggplant, mushrooms
parmesan cheese
fresh parsley
garlic, minced, 2 or 3 cloves
basil
lemon juice

1. boil pasta.
2. halve olives and cherry tomatoes.
3. heat some olive oil with minced garlic, salt, pepper, fresh herbs. 
4. toss in pasta, coat, heat. 
5. at the last minute, toss in veg.
6. serve with parmesan cheese. 
2. chop tomatoes

Meditteranean Fried Fish with Greek Salsa

This is a great way to use up some bland fish. 

YOU NEED:
fish: firm, and white: tilapia, cod, haddock, snapper, etc
greek seasoned flour: 1 cup flour with dried oregano, garlic powder, dry basil, salt, pepper, thyme. 
olive oil for frying

GREEK SALSA:
1 chopped tomato
half a chopped cucumber
1 smal chopped red onion
a bunch of chopped kalamata olives
fresh chopped parsley
feta cheese
1/4 cuplemon juice
a dash of oil
1 clove minced garlic
oregano
salt, pepper

fry fish until crisp, pop in the oven for 10-15 mins to finish.

Spicy Merguez Pasta Casserole

Very tasty pasta dish! Merguez is a tasty north-african spicy lamb sausage. 

YOU NEED:
1 cup al dente pasta
a bunch of cherry tomatoes
1/2 cup tomato sauce [add some red pepper flakes and garlic, maybe some fried onions, seasonings for extra yummy]
feta or goat cheese
fresh basil
2 fried merguez sausages

toss together and bake for 30 mins or until cheese has melted and browned,  at 375

Feta & Watermelon Salad

Omg. easy. delicious.

YOU NEED:

half a watermelon, chunks
1 box arugula
1/4 cup feta cheese
lemon juice
olive oil
balsamic
fresh mint

add it all together to taste!

Greek Arugula Salad

Best salad ever, seriously!

SALAD:
Baby arugula, 2 cups
1 onion, slivered
1 tomato, chunked or 1 packet grape tomatoes, halved
1/2 a bell pepper
1/4 cucumber
1/2 cup olives
1 avocado, cubed
1.4 cup crumbled feta


DRESSING:
3 tablespoons olive oil
1 tablespoon lemon juice
2 teaspoon red or white wine vinegar
salt, pepper, garlic, oregano

OPTIONAL:
walnuts or pecans
croutons
also add 1 teaspoon cherry or raspberry jam to vinaigrette

Avocado Salad with Seared Scallops

Depending on your vinaigrette and how you season your scallops, this dish can be VERY versatile, and anything from meditteranean to mexican. 

YOU NEED:
scallops, medium to large
mixed greens
tomato
cucumber
onion
[all chopped]
avocado slices
vinaigrette
seasoning for scallops

MEDITERRANEAN: marinate scallops in lemon juice, olive oil, oregano, garlic before frying. use similar vinaigrette or greek dressing. 
SPANISH: marinate scallops in tomato paste, garlic, olive oil, salt, pepper, vinegar, dry parsley, and a chili pepper
MEXICAN: marinate with oil, lime juice, chili, cumin, or just taco seasoning
ASIAN: add some soy sauce and ginger, along with garlic and sesame oil to the marindade. 

Assemble salad, fry scallops, toss salad with dressing, add scallops.

Meditteranean Artichoke Salad


OH LAWD. a tasty salad.

YOU NEED:
1 can artichokes, or marinated artichoke hearts
1 cucumber, peeled and sliced
green bell pepper, sliced
1 large tomato, slices
mixed greens
1 red onion, sliced
olives of your choice, halved

DRESSING:
juice of 1 lemon
1-2 tablespoons olive oil
salt, pepper
oregano
2 cloves minced garlic
1 teaspoon each red wine vinegar and dijon mustard

COMBINE!

Greek Salsa

Great for parties. Salsa can be so boring, no?

YOU NEED:
2 firm, seeded tomatoes, chopped small
half a cucumber, seeded, peeled, chopped small
3 sprigs green onion, or red
1 red pepper, chopped
fresh oregano, chopped
100 grams crumbled feta cheese

OPTIONAL:
chopped kalamata olives
chopped banana pepper for spicy

DRESSING:
juice of 1 lemon
1 tablespoon or so olive oil
salt, pepper
1 teaspoon red wine vinegar

Meditteranean Pasta Salad

So so so easy, bring to a potluck!

YOU NEED:
2 cups boiled pasta
halved cucumber slices
chunks of tomato
onion
red bell pepper
kalamata olives 
OPTIONAL: zucchini or eggplant

VINAIGRETTE:
3 tablespoons olive oil
1 tablespoon lemon juice
1 tablespoon red wine vinegar
salt, pepper, oregano, dill 
3 cloves minced garlic
FOR CREAMY: 1 tablespoon mayo or greek yogurt

Watermelon, Feta & Shrimp Salad

EASY. 

DRESSING: lemon juice, olive oil, salt, pepper, chives
SHRIMP: grill or fry with garlic
SALAD: Feta cheese, diced watermelon, mixed greens

Marinade for Grilled Duck Breast


To marinate duck before cooking:
2 tablespoons olive oil
2 tablespoons white wine vinegar
2 large cloves minced garlic
some chopped fresh rosemary
1 teaspoon dried oregano
1 teaspoon balsamic [ for caramelization]
salt
pepper

Easy Shrimp & Feta Salad

This will take you max... 20 minutes.

YOU NEED:

10 shrimps, peeled and deveined
a handful washed mixed greens or any lettuce
2 oz. crumbled feta, more or less
olive oil
salt pepper
oregano
garlic
tomato
cucumber
onion
bell pepper
lemon juice

1. chop veggies, toss salad with mixed greens, tomato, cucumber, onion, bell pepper.
2. toss with a bit of olive oil, salt and pepper, oregano, lemon juice
3. fry shrimp with garlic, olive oil, herbs
4 toss onto salad with feta.

Roasted Endive with Goat Cheese and Endive



YUMMY. just lay this out in a baking dish.

YOU NEED:

2 belgian endives, sliced thinly
balsamic vinegar\
2 cloves minced garlic
olive oil\
salt and pepper
oregano
goat cheese
pine nuts or any nuts

layer it all together and bake. sprinkle with dry oregano

Horiatiki Salata


MAKE TONS! The easiest and best Greek Salad.




1. toss together 1 peeled, seeded cucumber, chopped, 2 large chopped tomatoes, 1 large chopped red onion, and 1 green pepper, chopped
2, toss with 1/4 cup lemon juice and 3 tablespoons olive oil, 3 cloves minced garlic, 1 tablespoon red wine vinegar, salt, pepper, oregano.
3. top with feta cheese and serve! oh, and olives.
