Leek, Bacon & Mushroom Quiche

Easy & Delicious quiche. You can omit bacon, it's just as good!

YOU NEED:
1 leek
1 onion
bacon or not
mushrooms
all chopped.
cheese: gruyere, swiss, or emmental, or mixed
3 eggs
1/2 cup milk
some nutmeg, salt, pepper
any other herbs you want... thyme, parsley, oregano...
1 pie crust

sautee bacon, add in leeks, onions, then mushrooms
blind bake crust according to directions, usually 10 mins
add filling.beaten eggs,  sprinkle with more cheese
bake for 30 mins or so.

Gorgonzola & Bacon Egg Salad

EGG SALAD MADE AMAZING. yes.

YOU NEED:
6 eggs, hard boiled
1/2 cup low fat mayo
3 sprigsgreen onion
3 strips crumbled bacon or bacon bits
a handful crumbled gorgonzola or feta if you're not adventurous
OPTIONAL: celery, parsley, paprika, 

GOOD ON A SANDWICH WITH
peameal bacon
tomato
spinach
smoked salmon

Bacon, Basil & Egg Salad

So easy and so good!
YOU NEED:
6 eggs, hard-boiled
4 strips bacon, fried and crumbled
a handful fresh chopped basil
2 tablespoons low fat sour cream
a bit of lemon juice
salt, pepper
OPTIONAL: green onion, celery, sun-dried tomatoes

Avocado & Salami Grilled Cheese

This is what I had for dinner :) throw everything together!

YOU NEED:
2 slices bread, outside buttered or olive oiled. 
1 avocado, sliced
some salami or pepperoni, sliced
cheese, sliced
cheese, think sliced or grated [mozza, gruyere, sharp cheddar, or a mix]
tomato paste or sauce

1. butter outsides or bread, tomato sauce inside.
2. put in cheese, avocado, salami.
3. fry in a pan until cheese is melty. mmmm.

Cheesy Scrambled Eggs

Eggs are SOOOOO BORING.

Step it up.
YOU NEED:
butter
eggs
some kind of cheese
some kind of seasoning
optional: bread and meat

LIKE?
Greek: Eggs, onion, feta, tomato
German: emmental, ham, eggs, on a pretzel bun
American: cheddar, bacon, eggs
Western: bell peppers, ham, cheddar, onion, eggs
French: dijon, ham, green onion, gruyere emmental or swiss, eggs
Spanish: chorizo, peppers, tomato sauce, goat cheese
Spicy: BBQ sauce, chicken, blue cheese
Swiss: Ham, Mushrooms, Swiss cheese
Italian: pepperoni, mozzarella, basil, tomato

Scrambled Eggs with Herbed Croutons

Easy breakfast.

YOU NEED [for 2 or 3 people]
6 eggs [use half, or only egg whites if you're looking for a low fat and cholesterol friendly meal]
milk
2 slices stale bread
olive oil
garlic
salt, pepper, oregano, basil [dry]
chives as garnish
OPTIONAL: swiss, emmental, or gruyere
butter

1. warm butter.
2. add in eggs, scramble. once half-done, add in some milk.
3. fry up slices of bread in olive oil, dry oregano, basil, garlic. 
4. slice chives.
5. salt and pepper on eggs.
6. toss in croutons.
7. top with chives as garnish, and cheese is optional.

Egg & Broccoli Casserole

SOUNDS WEIRD? NO!

YOU NEED:
1 head broccoli cut into florets
6 eggs
1/2 cup milk
salt pepper
breadcrumbs

1. blanch broccoli, just a few mins.
2. grease a baking dish, dump in broccoli
3. mix eggs and milk. dump over broccoli. season with salt, pepper
4. add breadcrumbs to top, a bit of parmesan if being exciting. 
5. bake until eggs are set, 375 F for about 30 mins.

Beef & Cheddar Panini

Think of it as a stepped up grilled cheese.

YOU NEED:
Beef. Roast beef, steak, leftover ground meat, brisket, a burger patty, smoked meat, pulled beef, etc. Just had to be cooked.
Cheese. different beefs call for different cheeses. 
bread. 
butter.
a frying pan or panini press.

LIKE WHAT? 

The classic: Steak & Cheddar, with some caramelized onions thrown in
Swiss: Swiss cheese, fried mushrooms, steak
Spicy: beef brisket or pulled beef, pimento cheese or cheddar, throw in some jalapenos
French: Some dijon, gruyere, then steak, some green onion.
Mexican: steak, cheese, avocado, cilantro! dip in salsa
pizza: throw in some tomato sauce and mozzarella with your steak, maybe some basil

Mushroom & Feta Frittata

Frittatas. Fabulous and healthy!

YOU NEED:
1 greased baking dish
6 eggs, whipped [or 12 egg whites for SUPER LOW CAL
1/2 cup milk
1/2 cup sauteed mushrooms, sliced
crumbled feta
fresh basil

1. sautee mushrooms with maybe some garlic and olive oil
2. grease baking dish, put in feta, mushrooms, and some chopped basil
3. pour egg/milk mix on top.
4. bake until firm, about 30-40 mins at 400 F.

Croque Madame

YUM BEST BREAKFAST EVER.

YOU NEED:
2 slices bread
bechamel sauce
1/2 cup gruyere or emmental or swiss
2 large slices ham
1 egg
chives, salt, pepper

1. preheat oven to 400 F.
2. bread should be topped with prepared bechamel, ham, and cheese.
3. put another bread on and do the same. 
4. add more cheese, ham, and egg, and bake for 20 mins. 
5. add a fried egg and chives, salt and pepper.
 

SCOTCH EGGS!

made in class. sinful, delicious.

YOU NEED:
6 hard boiled eggs
12 raw sausages, meat squeezed out [some king of pork, or breakfast sausage]
flour
more flour
egg
breadcrumbs

1. HARD BOIL EGGS!
2. squeeze out sausage out of casing.
3. coat eggs in flour, then make patties out of sausage. wrap around eggs, seal.
4. coat in flour, then egg, then breacrumbs.
5. fry [in a pan, or deep fryer]

Healthy Breakfast Burritos

A way to make breakfast burritos healthy! PACKED with protein. 

YOU NEED:
Whole-wheat or corn tortillas [ healthy as possible]
avocado for healthy fat
tomatoes, cubed
green onions, sliced
part skim cheese, grated
scrambled eggs [try only egg whites for super low-cal]
OPTIONAL:
sour cream [low fat]
taco meat or breakfast sausage

Healthier Avocado Egg Salad

NO, MAYO. This is great for sandwiches, BUT avocados oxidize so it won't keep very long.

YOU NEED:
6 hard-boiled eggs. 
2 ripe avocados
1 tablespoon dijon
a few green onions, chopped
paprika
salt, pepper

OPTIONAL:
Mexican urge? It's avocado after all. 
Chili Pepper
Cumin
Cayenne seasoning
Mango

Mash and there you go!

Healthy Breakfast Sandwiches

Baked, healthy breakfast!

YOU NEED:
a bread [whole wheat english muffin or toast]
a veg [tomato, spinach, or pepper]
hard boiled eggs
salt and pepper
cheese

BAKE. for 10 mins. 

IDEAS? top english muffs with:

chicken, avocado, salsa, egg, monterey jack cheese
turkey bacon, egg, tomato, light cheese
tomato, a dab of hollandaise, egg, low fat ham
onion, roast beef, low fat cream cheesem dijon, egg

ETC. be creative and use good ingredients!

Frittatas!


Like a crustless quiche, or fancy omelette!

METHOD:

YOU NEED:
6 eggs
filling [veggies and meat]
grease [butter or spray]
cheese of your choice
seasoning
  1. Preheat oven to 425 degrees F (220 degrees C). Grease a baking dish or pan.
  2. Heat a skillet over medium heat; cook whatever ingredients you're using, sauteed [veggies or meat]
  3. Whisk eggs, milk, seasoning and black pepper in a large bowl; pour eggs over ingredient mix. add cheese.
Bake until eggs are set and cheese is melted, about 20 minutes  


IDEAS?

ITALIAN FRITTATA: italian sausage chunks, basil, tomatoes, garlic, provolone or parmesan
4 CHEESE FRITTATA: parmesan, goat cheese, provolone, cheddar
GREEK FRITTATA: onion, zucchini, tomato, bell pepper, feta cheese












MEATY FRITTATA: sausage, bacon, ham, salami
MEDITERRANEAN FRITTATA: roasted veggies [eggplant, zucchini, olives, peppers] with feta or goat cheese
FRENCH FRITTATA: gruyere or emmental, ham, onions, parsley
CAPRESE FRITTATA: Mozzarela, Fresh Basil, Tomatoes
BACON FRITTATA: Bacon, Feta, Onion, Tomato
WESTERN FRITTATA: peppers, ham, cheddar, onion
MIDDLE EASTERN FRITATTA: kebab, parsley, halloumi cheese, cumin
MUSHROOM MELT FRITTATA: swiss cheese, mushrooms

Healthier Breakfast Ham Cups!

Yeah, yeah, bacon cups are a thing. USE LEAN HAM INSTEAD!

1. grease muffin tins with cooking spray, just a little, or oil.
2. put in 1 or 2 slices ham, depending on how thin it is. 
3. scramble eggs if you want, or just plop in a whole egg.
4. optional: green onion, cheese, tomato, mushrooms, any omelette ingredient you can think of really.
5. bake for 15-20 mins at 400 F.

Healthy Turkey BLT Wraps


BLT, lighter!

USE: 
Corn or lower-fat tortilla wraps
turkey bacon or veggie bacon
low fat or olive oil mayonnaise
lean turkey breast or slices
the rest is normal.... cheese [try cream cheese with dijon, amazing! or sharp cheddar], lettuce, tomato. yum!
easy, bring to work. lots of black pepper!

German Style Crepes


These are fluffier, thicker,  and less sweet than french crepes. They're also known as german pancakes. 

In a bowl, whisk together 1 cup all purpose flour [or half whole wheat] flour with 2 eggs until combined. 
Add in half a cup milk, 1/2 a cup water, and 2 tablespoons melted butter. add a bit of salt, just a pinch.

NOTE: for a slightly sweeter crepe, add in 2 tablespoons or more sugar, and some vanilla extract, but not much. 

Grease a pan, pour in about 1/4 cup worth at a time, cooking on one side for 2 mins until browned,  then flipping. This should make 8-10 crepes. 

If you're eating them right away, add ingredients to the cooked side, like cheese, ham, etc. But I prefer just making the whole batch and warming them up later with whatever ingredients I want.

Spinach Salad with Warm Bacon Dressing

\\Yummy spinach. Bacon as a guilty pleasure!

1. wash and toss spinach.
2. boil eggs, hard.
3. thinly slice some red onion.
4. dressing: fry a few strips of bacon, drain and cool, crumble into small pieces. mix with 1/4 cup mayo, 2 tablespoons lemon juice, and 1 tablespoon balsamic vinegar and 2 teaspoons dijon mustard, salt and pepper. warm for 20 seconds in microwave.
5. toss salad and serve.
