Chicken, Mango, Blueberry Salad

YOU NEED: [you can omit chicken to make vegetarian or vegan]
1 mango, chopped
blueberries
arugula or mixed greens
green onions
cooked chicken
sesame ginger vinaigrette

SESAME GINGER VINAIGRETTE:
2 tbs sesame oil
1 tbsp lime juice
1 tsp soy sauce
salt, pepper
red pepper flakes
grated ginger, a little
grated garlic, a little

Sesame Garlic Noodles


 * NOTE: chicken is optional, otherwise it's VEGAN!

YOU NEED:
1 cup boiled egg noodles
1 head brocccoli cut into florets
2 cloves minced garlic
sliced peppers
sesame oil
chopped green onions
sesame seeds
soy sauce
pepper
OPTIONAL:
chicken, tofu, beef, pork
chili sauce for spice
fish sauce
eggs

1. in a skillet heat some oil [preferably sesame oil]
add broccoli, peppers, onions, garlic. also add tofu or chicken or meat if using. 
2. prepare noodles add 2 eggs if using. .
3. toss into skillet with 2 tablespoons soy saucce, 1 tbs fish sauce, and chili sauce.
4. season to taste.

Asian Coleslaw

A simple twist on coleslaw.

1. in a saucepan, boil 1/4 cup sesame vinegar, 1/4 cup rice vinegar, and 4 tablespoons sugar.
2. as soon as it reaches a boil, turn off heat and add 1/4 cup sesame oil, salt and pepper, and 2 cloves minced garlic, and 2 tablespoons soy sauce.
3. pour onto coleslaw mix [red and green cabbage, onion, carrot, shredded. optionally add broccoli or bok-choy or even edamame. 
4. toss, serve! 

NOTE: add sriracha to the dressing if you want asian SPICE!

Beef & Broccoli Sweet & Sour Fry


A delicious and low fat way to satisfy your asian takeout craving, which happens all too often, i know.....

YOU NEED:
1 flank steak or thin steak, sliced into thin pieces.
1 head of broccoli, cut into florets.
2 cloves minced garlic.
1 tablespoon chili sauce or 1 teaspoon red chili flakes
1 inch piece of ginger, grated.
2 tablespoons soy sauce
1 tablespoon brown sugar
1 tablespoon tomato paste
sesame seeds and green onions as garnish. 
sesame oil.

1.heat sesame oil, fry minced garlic and add meat. after a few minutes, add broccoli, ginger, and chili paste or flakes. 
2. add soy sauce, tomato paste, and simmer. taste, and adjust salt pepper if needed [which you shouldnt have to]
3. optionally add bean sprouts, carrots, bamboo shoots, mushrooms. if not.....
4. simmer until done, serve with rice, green onions and sesame seeds.

Sriracha & Coconut Soup



This is a MUST HAVE for winter. 

YOU NEED:

250 mls light coconut milk
3 tablespoons sriracha or chili-garlic sauce
250 mls chicken or vegetable broth
1 inch piece grated ginger
2 cloves minced garlic
salt & pepper if needed
a bit of lime juice
OPTIONAL:  shrimp, tofu, broccoli, peppers, onions, bok choy, bean sprouts, mushrooms

TOPPINGS: green onion, cilantro, peanuts

1. fry tofu, vegetables, or meat with a bit of sesame oil. add garlic and ginger. 
2. add sriracha or chili sauce [more or less, depending on spice preference]
3. add chicken or veggie broth, and coconut milk. taste, adjust with lime juice, salt, and pepper if needed.
4. simmer, add corn starch if you want a thicker consistency.

Hoisin & Sesame BBQ Wings


HOISIN SESAME BBQ SAUCE:
1/4 cup hoisin sauce
1 tablespoon tomato paste
1 tablespoon soy sauce
3 cloves minced garlic
1 tablespoon brown sugar, if not sweet enough
1/2 tablespoon sesame oil
1/2 tablespoon chili paste if spice if wanted


TOPPING: sesame seeds and green onion, cilantro

1. slather on as BBQ sauce. great with chicken, salmon, pork, or even beef.

Sweet & Sour (and Spicy?) Pineapple Shrimp


Sweet and sour sauce, from scratch! Also goes with chicken.

1. fry shrimp until pink.
2. in a pot, heat 1 tablespoon sesame oil and toss in 2 cloves minced garlic. 
3. add in 1 small can pineapple [drained] or chop up fresh pineapple. Add 1/4 cup white vinegar, and 1/4 cup chicken or vegetable broth. for a bit of spice, add 1 tablespoon chili sauce or sriracha!
4. simmer, add 1 tablespoon water mixed with 1 tablespoon corn starch [dissolved] to thicken. salt and pepper if needed. 
5. add in shrimp. 
6. serve on rice or rice noodles, with chopped green onion.

Sriracha Chicken Strips


Bland old chicken strips turned exciting, and baked, not fried!

1. slice chicken breast into strips.
2. get 2 bowls. fill one with flour, one with 1 egg and 2 tablespoons sriracha or chili garlic paste, and one with panko breadcrumbs, salt and pepper. 
3. dip into each, in order.
4. bake at 400 F, for 10 mins, flip, and bake for another 10.
5. serve with soy sauce or plum sauce!

Baked Stuffed Wontons with Chili Plum Sauce


1. get wonton wrappers. preheat oven to 350 F. 
2. make filling: 
500 grams ground beef, shrimp, crab, chicken, pork turkey or tofu, mashed.
1 small chopped red onions or 2 sprigs green onion chopped
1 tablespoon soy sauce
1 clove minced garlic
1 egg yolk
salt, pepper, red chili flakes
1 teaspoon white or rice vinegar and 1 teaspoon sesame oil

2. fill wontons, fold, press shut with egg to seal.
3. bake for 10 mins on each side. 

SERVE! with:
Chili Plums Sauce: simply ix chili and plums with sesame oil, vinegar, garlic powder, salt and pepper

OR make your own:
in a food processor, puree: 2 plums, 2 chili peppers, 1 tablespoons honey, 1 clove minced garlic, red pepper flakes, ginger, salt and pepper and a bit of soy sauce

Shrimp & Pork Meatballs with Sweet Chili Sauce


Delicious spicy asian meatballs! 

1. Blend together 250 grams soft shrimp and pork, 1/4 cup breadcrumbs, 1 egg, salt, pepper, 1 teaspoon soy sauce, 1 teaspoon chili paste, 1 couple sprigs green onion, salt, pepper, and 2 cloves garlic.
2. fry in a bit of sesame oil until browned.
3. meanwhile, blend together 1 tablespoon chili sauce, red pepper flakes, 1 tablespoon honey,1 clove garlic, cilantro, salt and pepper. 
4. serve!

Baked Crab Rangoon


1. lay out wonton wrappers.
2. mix together 1 package shredded crab meat, 2 tablespoons light softened cream cheese, 1 clove minced garlic, 1 tablespoon low fat mayo, 1 tablespoon soy sauce, green or red chopped onion, black pepper. stir into a paste.
3. spoon in 1 tablespoon into each wonton wrapper, wet edges with egg, fold and press with a fork.
4. bake for 10 mins on each side, flipping.
5. serve with spicy chili sauce.

PAIR WITH: Sake or Beer.

Sweet & Sour Fried Rice


1. Boil rice until done.
2. in a pan, heat 1 tablespoon sesame oil. add in 2 cloves minced garlic, chopped onions, carrots, peppers, and any chicken, meat or tofu if using.
3. add rice. also add 1/4 cup pineapple juice, 1 tablespoon tomato paste or ketchup, 1 tablespoon soy sauce, and 1 tablespoon white vinegar. add extra brown sugar if not sweet enough, or extra vinegar if not sour enough. 
4. simmer until done. adding eggs.

PAIR WITH: Sapporo ? Mmm.

Baked Coconut Chicken with Sweet Chili Sauce


Nevermind boring plain chicken fingers, these are amazing! Baked or fried, but still a healthy alternative. 

1. get chicken breast, cut into strips. 
2. dip in flour, then coconut milk, then panko breadcrumbs mixed with shredded coconut.
3. bake for 30 minutes flipping once halfway through, or fry until golden.
4. meanwhile, make sweet chili sauce: 2 tablespoons honey, 1 tablespoon sesame oil, a bit of ginger and garlic, salt,pepper, a squeeze of lime, 2 chopped red chilis.
5. serve with sauce.

Honey Garlic Shrimp


Easy, great for salads, stir-fries, sandwiches, whatever. 

1. heat 1 tablespoon sesame oil, add in 3 cloves minced garlic.
2. add in peeled shrimp, cook until pink. 
3. add in 1 tablespoon honey or more,  1 teaspoon soy sauce, 1 teaspoon rice or white vinegar, salt, pepper.
4. OPTIONAL: fresh ginger, curry powder, lime juice, hoisin sauce, red pepper flakes. 

simmer until delicious, serve! on rice, keep aside, whatever. 
you can also add vegetables for a great stir fry.

Super Easy Pad-Thai Ramen


Whip this up for an easy dinner! 30 mins, max. 

1. Boil a package of plain ramen noodles.
2. heat a pan with 1 tablespoon sesame oil. toss in chicken or shrimp, then vegetables [snow peas, bean sprouts, red onion, carrots, peas, whatnot and brown.
3. add in 2 cloves minced garlic, 1 chopped chili pepper or 1 tablespoon chili paste, 2 tablespoons peanut butter, 1 tablespoon white or rice vinegar, 1 tablespoon soy sauce, and 1 tablespoon lime juice. 
4. toss to coat evenly, add noodles. 
5. serve, top with sesame seeds, fresh  basil or cilantro, & green onion and a wedge of lime.

Spicy Soba Slaw


1. boil soba or buckweat noodles [or ramen, or rice noodles] drain water, and cool for half an hour or more. 
2. toss with coleslaw mix OR shredded cucumber, onion, cabbage, carrot, etc. with cold noodles. 
3. mix together 1 tablespoon sesame oil, 1 tablespoon white or rice vinegar, 1 tablespoon lime juice, 1 or 2 cloves garlic [minced] 1 inch piece of shredded ginger, 1 teaspoon curry paste or sriracha, salt, pepper, and 1 teaspoon horseradish or wasabi paste. 
4. toss together, top with more sriracha or chili sauce, green onions and sesame seeds.

Garlic & Ginger Fried Beans

\
1. boil green beans for 5 mins. drain.
2. in a saucepan,  heat 1 tablespoon sesame oil,  then add 2 cloves minced garlic and 1 inch grated ginger. 
3. add green beans, fry, top with sesame seeds, 1 teablespoon soy sauce, 1 tablespoon brown sugar, 1 tablespoon lime juice, and 1 tablespoon chili sauce or sriracha. 
4. toss, season to taste with salt and pepper.
5. fish sauce and other veggies optional, such as bean sprouts, broccoli, carrots, or zucchini.
6. meat can be added.
7. serve on rice or noodles.

Shanghai Style Noodles


YOU NEED: 

Ingredients:

chicken is optional, or shrimp, or beef, or tofu
2 teaspoons soy sauce
2 teaspoons rice wine or sherry
1/2 teaspoon salt
Pepper, to taste
Pinch of cornstarch

1 cup noodles, soba or other thick asian noodles
1 or 2 teaspoons sesame oil
shredded cabbage, carrots, mushrooms, and whatever other vegetables.
3 cloves garlic, peeled and minced
1 green onion, chopped
oil for frying
1 tablespoon hoisin sauce, mixed with 1 1/2 tablespoons water
1 tablespoon chili paste if you want spicy

Marinate veggies and meat in first 5 ingredients. 

Cook noodles and toss with sesame oil. 

In a heavy frying pan or a wok, heat 2 1/2 tablespoons oil. When the oil is hot, add the garlic. Stir-fry  Add meat and veggies, fry until done. 

Heat 2 tablespoons oil. When the oil is hot, add the cabbage. Stir-fry for 2 minutes. Season with a bit of soy sauce and/or sugar while stir-frying if desired. Turn off heat. 

Heat 1 1/2 tablespoons oil in  another pan. When the oil is hot, add the noodles. Stir-fry quickly, stirring to coat the noodles in the oil and make sure they don't stick to the pan. Add the hoisin sauce, again tossing to coat the noodles. Taste and add salt and/or soy sauce as desired. Add the cooked meat, cabbage, and vegetables.
Top with green onions and serve. 



Stir Fried Pasta with Bok-Choy


a super easy and fast stir fry!

1. boil soba, rice, or egg noodles. drain.
2. heat 1 tablespoon sesame oil in a saucepan. add 3 cloves minced garlic, 1 inch of grated ginger, and 1 tablespoon of chili paste for spice.
3. add in Bok Choy and mushrooms, cook until soft. [also, you can add any of the following: broccoli, green or red onion, bell peppers, snow peas, bean sprouts, carrots, zucchini, or eggplant]
NOTE: chicken, beef, pork, or tofu can be added
4. add in 1 tablespoon soy sauce or rice vinegar, or both. 
5. season with salt, pepper, and sesame seeds.
6. add noodles in. 
7.  if using, crack 2 eggs over, let cook and stir once solid. 
8. serve!

Coconut Rice


1. Place 1 cups basmati rice, 1 cup coconut milk, 3/4 cups water, in a pot. heat on medium high, covered, stirring occasionally. add 1 tablespoon oil. 
2. Once it has begun to gently bubble, stop stirring and reduce heat to low heat.
3.  Cover tightly with a lid and let simmer 15-20 minutes, or until most of the liquid has been absorbed by the rice. 
4. optional: mix in green onion or vegetables. 

Serve with toasted coconut, thai food, indian food, or anything!
