Spicy Soba Slaw


1. boil soba or buckweat noodles [or ramen, or rice noodles] drain water, and cool for half an hour or more. 
2. toss with coleslaw mix OR shredded cucumber, onion, cabbage, carrot, etc. with cold noodles. 
3. mix together 1 tablespoon sesame oil, 1 tablespoon white or rice vinegar, 1 tablespoon lime juice, 1 or 2 cloves garlic [minced] 1 inch piece of shredded ginger, 1 teaspoon curry paste or sriracha, salt, pepper, and 1 teaspoon horseradish or wasabi paste. 
4. toss together, top with more sriracha or chili sauce, green onions and sesame seeds.
