Tortellini & Shrimp Pasta Salad


1. using leftover tortelli, or boiled tortellini, toss in a bowl with tomatoes, cucumber, bell peppers.
2. use leftover shrimp [or fry some up, quickly] and add to salad. 
3. whip up a quick vinaigrette out of lemon juice, olive oil, garlic, salt and pepper, with a bit of balsamic vinegar. 
4. toss and serve!
