Mailänder Schnitzel

This strange take on the cŀassic Schnitzel is a weŀcome one. Ŀike veaŀ or chicken parmesan, but... different. 

YOU NEED

thin veaŀ or pork or chicken , pounded with a maŀŀet
breading (flour, egg, breadcrumbs, seasoning)
oiŀ to fry
parmesan and/or mozzareŀŀa
ham or prosciutto
a tomato
fresh basiŀ

1. pound meat, dip in fŀour seasoned with garŀic powder, onion powder, and dried herbs (itaŀian seasoning)
2. drip in egg 
3. coat in panko
4. fry untiŀ goŀden brown. 
5. preheat oven to 375 F
6. top schnitzeŀs with a sŀice of ham, a tomato, and some cheese
7. bake untiŀ cheese has meŀted, 20 mins or so. 
8. serve with fresh basiŀ

Baked Fajitas

Skip frying and bake this instead.

YOU NEED: 
1 cooked chicken breasts, in slices
1 onion, sliced
1 red pepper, sliced
1 green pepper sliced
juice of 1 lime
3 tablespoons oil
2 packets fajita seasoning

1. toss together
2. bake, optionally add cheese on top
3. 30 minutes or so

Sausage Spaghetti

STEPS:
fry up sausage
remove, fry mushrooms, peppers, and onion in rendered fat
boil pasta
add tomato sauce to fried mushrooms onions and sausage
garlic, basil, oregano, salt, pepper, etc. seasoning
add pasta. serve. with CHEESE

Ballantine Chicken

Easy, just stuffed chicken!

YOU NEED:
boneless chicken thighs or breasts
oil
filling

1. pound chicken with mallet to flatten it. 
2. make a filling.
3. roll, tie with string

FILLING?
Sauteed garlic spinach with goat cheese and toasted pine nuts
Sausage & Herbs
Feta & Garlic Sauteed Vegetables
Swiss Cheese & Ham
Fried Mushrooms, Cheese & Bacon
Broccoli & Cheddar
Tomato, Mozzarella, Basil

Asparagus Pasta Salad

Make asparagus wonderful! Dress up your pasta salad. 

YOU NEED:
1 bunch asparagus, cooked, then chopped into parts
1 cup pasta
1 tomato, chunked
some breadcrumbs
lemon juice, olive oil, salt, pepper, breadcrumbs

EXCITING?
garlic, minced
goat cheese, feta, or parmesan
canned salmon or tuna
chicken
beef & soy sauce or sesame oil instead of olive oil, some ginger and cilantro for an asian twist
fresh chopped basil
pecans, peanuts, pine nuts, or walnuts
lamb & some cumin and parsley for a middle eastern take. you can also sub couscous or bulghur.

Chicken, Mango, Blueberry Salad

YOU NEED: [you can omit chicken to make vegetarian or vegan]
1 mango, chopped
blueberries
arugula or mixed greens
green onions
cooked chicken
sesame ginger vinaigrette

SESAME GINGER VINAIGRETTE:
2 tbs sesame oil
1 tbsp lime juice
1 tsp soy sauce
salt, pepper
red pepper flakes
grated ginger, a little
grated garlic, a little

Cherry, Chicken Salad with Minted Goat Cheese Dressing

Easily omit chicken if vegetarian. 

DRESSING:
2 tbs crumbled goat cheese
2 tbs low fat sour cream
2 tbs lemon juice
salt, pepper
chopped mint

SALAD: 
butter greens or mixed greens
sour cherries, sliced or halved
OPTIONAL:
red onion, slivered
walnuts or pecans, crumbled

CHICKEN:
plain, or marinated in lemon juice, garlic, olive oil, cumin, paprika and sumac before cooking

Cream of Chicken Pasta

Ok, this is lazy XD but here you go.

YOU NEED:
1 can cream of mushroom soup
some cooked sliced chicken breast
green peas [canned]
pepper NO SALT. salty enough. 
pasta.

1. boil pasta.
2. cook chicken if not cooked.
3. add chickento a saucepan, add in a bit of butter or oil, and some extra seasoning, like garlic or whatever. 
4. add in cream of mushroom soup. heat. add pasta. 

and yeah... NOM. cheese?

Fiery Chorizo & Chicken Tacos

Hope you like spicy!

YOU NEED:
1 chicken breast, sliced
1 large [spicy] chorizo, sliced
spicy taco seasoning
peppers [ WARNING: habanero is for SPICY FIENDS. Jalapenos are ok, and bell pepperes will add a touch of sweetness.]
tortillas
cheese
avocado
sour cream
salsa... as if you need more spicy
lettuce
tomato
cilantro
beans? 


The best thing is you can adjust the spiciness to taste! Most people can't even handle a chorizo on its own.

Easy Chicken Teriyaki

SO EASY!

YOU NEED
chicken breast
sesame oil
teriyaki sauce
minced garlic
ginger
OPTIONAL: chili sauce for spice

GARNISH:
cilantro
sesame seeds

1. get some chicken breast, slice.
2 fry in sesame oil, with garlic. 
3, add teriyaki sauce and ginger, fry until chicken is done. optionally add some chili or chili sauce.
4. garnish with sesame seeds and cilantro
5. serve atop rice.

Southern Parsley Rub for Fish

A beautiful rub to bake or broil fish. Might work for chicken, I dunno.

YOU NEED:
  • 1/2 cup fresh parsle, chopped finely
  • 1/3 cup olive oil
  • 6 cloves garlic, minced
  • 1 teaspoon cayenne peppers spice, or a pepper if using food processor
  • juice and zest of 1 lemon or lime
  • salt and pepper.
  • a food processor will make life easier.

Cheesy Asparagus Chicken Wraps!

Oh yum! Really quick and easy to throw together. 

YOU NEED:
8 chicken filets, thin [like schnitzel]  or, turkey.
asparagus, blanched [partially cooked, boiled about 5 minutes]
cheese
seasoning
breadcrumbs

1. lay out chicken fillet.
2. blanch asparagus
3. cool slightly after draining.
4. put aspargus on one end of chicken, top with cheese, roll up.
5. dip in seasoning, then egg, then breadcrumbs
6. bake for 30-40 mins on a greased baking dish at 400 F

MORE SPECIFICALLY:
for a meditteranean style chicken, stuff with feta or goat cheese, and season with some lemon juice and oregano and garlic
for a french style, use gruyere, swiss or emmental cheese, and coat with dijon and tarragon
for something zesty, use blue cheese and BBQ sauce.
for a classic italian, stuff with mozza and even coat in tomato paste for a sort of chicken parmesan-style dish.

Sesame Garlic Noodles


 * NOTE: chicken is optional, otherwise it's VEGAN!

YOU NEED:
1 cup boiled egg noodles
1 head brocccoli cut into florets
2 cloves minced garlic
sliced peppers
sesame oil
chopped green onions
sesame seeds
soy sauce
pepper
OPTIONAL:
chicken, tofu, beef, pork
chili sauce for spice
fish sauce
eggs

1. in a skillet heat some oil [preferably sesame oil]
add broccoli, peppers, onions, garlic. also add tofu or chicken or meat if using. 
2. prepare noodles add 2 eggs if using. .
3. toss into skillet with 2 tablespoons soy saucce, 1 tbs fish sauce, and chili sauce.
4. season to taste.

Fajita Lettuce Wraps

A fun, healthy twist on fajitas. 

YOU NEED:
boston or ice berg lettuce, seperated into "cups"
seasonings
meat optional, or veg of choice. 

1. lay out lettuce cups, condiments such as sour cream, salsa, guac, tomatoes, olives, avocado, refried beans, cheese, pickled jalapenos, pico de gallo, etc
2. fry filler with fajita or taco seasoning. you can make it or buy it.

IDEAS?

VEGAN: Fry peppers,  onions, mushrooms or tofu with seasoning. serve with vegan cheese and crema, avocado.
VEGETARIAN: Peppers, onions, fried. serve with cheese and sour cream
STEAK, ONIONS & PEPPERS WITH BACON BITS
CHICKEN STRIPS WITH MUSHROOMS AND SOUR CREAM
4 CHEESE WITH MONTEREY JACK, CHEDDAR, FETA & MOZZARELLA
PULLED PORK WITH CHIPOTLE SALSA
BARBACOA LAMB WITH GREEN ONION & FETA
SHRIMP WITH MANGO SALSA, CILANTRO AND COLESLAW
BATTERED SNAPPER WITH ROASTED RED PEPPERS
GROUND MEAT WITH  ROASTED TOMATOES & SHARP CHEDDAR
PULLED BBQ CHICKEN & BLUE CHEESE

Chicken Parmesan Meatballs

Great by themselves, or with spaghetti or squash, whatever!

YOU NEED:
500 grams lean ground chicken
1/4 cup breadcrumbs
1 egg
finely chopped basil
2 cloves minced garlic
1/4 cup grated parmesan
1/4 cup chopped or sun-dried tomatoes
salt and pepper

Mix together, form into balls.
bake for 15 minutes on a baking pan at 400 F, flip, bake another 15 or until done
or, fry on low heat in some healthy olive oil.
cut one open to make sure they're cooked through.

Chicken, Spinach & Mushroom Pizza

YOU NEED:
pizza dough [pre-made... what i go for]
cooked and chunked chicken breast
tomato sauce, garlicky!
mushrooms
spinach, chopped or not
emmental or swiss cheese

bake for 15t minutes until top has browned. 

Creamy Bruschetta Chicken Breasts

1. preheat oven to 400 F.
2. line up chicken breasts. top with minced garlic, chopped tomatoes, chopped onion, chopped fresh basil, lemon juice, and a bit of olive oil, salt and pepper.
3. for creaminess, top with a can of cream of chicken soup [or any creamy soup]
4. bake for 15 minutes. 
5. sprinkle on some parmesan, bake for another 10 or until done.

Easy Chicken Divan

The ultimate comfort food! 

you need:
1 broccoli chopped into florets, boiled slightly
2 to 3 chicken breasts, cooked.
1 can cream of chicken or mushroom soup, OR make your own sauce.... see below
a bit of lemon juice
 salt and pepper to taste, and any other seasoning.
bread cut into cubes
a bit of parmesan cheese

MAKE YOUR OWN SAUCE: 
Melt 1 tablespoon butter in a saucepan. add in some chopped mushrooms, maybe a bit of garlic and lemon juice, and finally some low-fat sour cream or skim milk. if too liquid, mix in a bit of flour, a roux, or some corn starch dissolved in water. season with salt and pepper. you could also add in a bit of healthy mayo. spices like curry powder or cayenne work nicely. 

1. preheat oven to 375 F. 
2. toss cooked broccoli and chicken in cream sauce, put in a greased casserole dish.
4. sprinkle with bread chunks, and finally, some parmesan cheese.

Chicken Salad with Emmental & Apple

STILL GREAT.... omit chicken if vegetarian.

YOU NEED:
grilled chicken breast. this is sort of a french salad, so try seasoning/marinating with tarragon, lemon juice, mustard, white wine vinegar... etc. otherwise leftovers or plain salt and pepper will do.
lettuce, any kind
thinly sliced granny smith [sour] apples
walnuts
grated or cubed emmental cheese

DRESSING:
1 tablespoon dijon mustard [grainy is best]
2 tablespoon olive oil
1 tablespoon white wine vinegar
honey for a bit of sweetness, to taste. 
salt, pepper, a bit of tarragon or fresh basil, or oregano.... a bit of herb, you know.

Garlic & Spinach Spaghetti with Meatballs


YUMMY. boring spaghetti sauce, away!!

 sautee some fresh spinach with onions and mushrooms, in a pan with olive oil. chopped. add 3 cloves mined garlic, salt, and pepper.

boil pasta, drain.

put sauteed stuff in a pot with 1 jar tomato sauce. season to taste and let simmer. optional: basil, wine, fresh herbs

serve on pasta with lots of fresh parmesan.
