Spaghetti with Bacon & Bŀeu

You can make this spicy if you want. Bacon, Bŀue Cheese, and a bit o zesty sauce!

YOU NEED:

1 cup boiled pasta
5 strips cooked, crumbed bacon
a handfuŀ crumbŀed bŀue cheese

SAUCE:
sauteed onions with minced garŀic, peppers, tomatoes and red pepper fŀakes or a chiŀi for spice. 

CONSIDER: 
oŀives, chicken, ceŀœry or carrot. buffaŀo styŀe

Cream of Cauliflower Soup

YOU NEED:

4.5 L    vegetable stock
1.5 kg  cauliflower, chopped
375 g   onion, chopped fine
300 g    butter
300 g   flour
1.5  L   milk, hot
750 ml 35%  cream, hot
Salt      to taste
White pepper, to taste


Method:

1.       Bring the stock to a boil in a heavy saucepot.
2.      Add cauliflower and onions.
3.      Simmer until the vegetables are tender.  Do not overcook.
4.      Melt the butter in a saucepan and add the flour to make a roux.  Cook the roux a few minutes, but do not let it colour.  Cool the roux slightly.
5.      Beat the roux into the soup.  Simmer until no starch taste remains.
6.      Blend the soup until smooth. 
7.      Heat together the milk and cream.  Add to the soup to bring it to a proper consistency. 
8.      Heat the soup again, but do not let it boil.
9.      Season to taste.

Ballantine Chicken

Easy, just stuffed chicken!

YOU NEED:
boneless chicken thighs or breasts
oil
filling

1. pound chicken with mallet to flatten it. 
2. make a filling.
3. roll, tie with string

Sauteed garlic spinach with goat cheese and toasted pine nuts
Sausage & Herbs
Feta & Garlic Sauteed Vegetables
Swiss Cheese & Ham
Fried Mushrooms, Cheese & Bacon
Broccoli & Cheddar

Gorgonzola & Bacon Egg Salad

EGG SALAD MADE AMAZING. yes.

YOU NEED:
6 eggs, hard boiled
1/2 cup low fat mayo
3 sprigsgreen onion
3 strips crumbled bacon or bacon bits
a handful crumbled gorgonzola or feta if you're not adventurous
OPTIONAL: celery, parsley, paprika, 

GOOD ON A SANDWICH WITH
peameal bacon
tomato
spinach
smoked salmon

Asparagus Pasta Salad

Make asparagus wonderful! Dress up your pasta salad. 

YOU NEED:
1 bunch asparagus, cooked, then chopped into parts
1 cup pasta
1 tomato, chunked
some breadcrumbs
lemon juice, olive oil, salt, pepper, breadcrumbs

EXCITING?
garlic, minced
goat cheese, feta, or parmesan
canned salmon or tuna
chicken
beef & soy sauce or sesame oil instead of olive oil, some ginger and cilantro for an asian twist
fresh chopped basil
pecans, peanuts, pine nuts, or walnuts
lamb & some cumin and parsley for a middle eastern take. you can also sub couscous or bulghur. 

Meditteranean Shrimp & Feta Mac and Cheese

A twist on mac and cheese!

YOU NEED
oven, preheated to 400 F
12 cooked peeled shrimp
1 cup pasta
1/2 cupfeta cheese
2 cloves garlic
1/4 cuplemon juice
1 cup greek yogurt
italian breadcrumbs
oregano

1. get a greased or lined baking dish, preheat oven
2. cook shrimp and pasta, seperately. shrimp can be bought precooked, or boiled.
3. toss shrimp and pasta with yogurt, garlic, lemon juice, and half the feta cheese. 
4. put in baking dish, top with breadcrumbs and more feta, seasoning like oregano
5. bake for 30 mins or so until top is browned.

Curried Lamb Meatballs

These are great meatballs.
YOU NEED
500 grams ground lamb
1/4 cup breadcrumbs
2 egg yolks
1 tbs curry paste [tandoori, masala, vindaloo, etc]
chopped mint and or cilantro

MAKE BALLS. 

in the meantime, you can either make raita, or a simple curry sauce to serve on the meatballs.
pick your favourite curry, mix in 2 tbs with 1 cup fat-free plain yogurt and some indian spices. feel free to fry up some onion and veg too. 

1. fry meatballs until done. add curry sauce over and heat until done. garnish with some fresh herbs, serve on rice, with raita.

Pasta E Olio, Meditteranean Style

Mmmm. 

YOU NEED:
1 cup cooked fettucine
sliced olives, green and kalamata
some cherry tomatoes
OPTIONAL: zucchini, eggplant, mushrooms
parmesan cheese
fresh parsley
garlic, minced, 2 or 3 cloves
basil
lemon juice

1. boil pasta.
2. halve olives and cherry tomatoes.
3. heat some olive oil with minced garlic, salt, pepper, fresh herbs. 
4. toss in pasta, coat, heat. 
5. at the last minute, toss in veg.
6. serve with parmesan cheese. 
2. chop tomatoes

Cream of Chicken Pasta

Ok, this is lazy XD but here you go.

YOU NEED:
1 can cream of mushroom soup
some cooked sliced chicken breast
green peas [canned]
pepper NO SALT. salty enough. 
pasta.

1. boil pasta.
2. cook chicken if not cooked.
3. add chickento a saucepan, add in a bit of butter or oil, and some extra seasoning, like garlic or whatever. 
4. add in cream of mushroom soup. heat. add pasta. 

and yeah... NOM. cheese?

Beef & Cheddar Panini

Think of it as a stepped up grilled cheese.

YOU NEED:
Beef. Roast beef, steak, leftover ground meat, brisket, a burger patty, smoked meat, pulled beef, etc. Just had to be cooked.
Cheese. different beefs call for different cheeses. 
bread. 
butter.
a frying pan or panini press.

LIKE WHAT? 

The classic: Steak & Cheddar, with some caramelized onions thrown in
Swiss: Swiss cheese, fried mushrooms, steak
Spicy: beef brisket or pulled beef, pimento cheese or cheddar, throw in some jalapenos
French: Some dijon, gruyere, then steak, some green onion.
Mexican: steak, cheese, avocado, cilantro! dip in salsa
pizza: throw in some tomato sauce and mozzarella with your steak, maybe some basil

Shrimp Penne with Creamy Parmesan Sauce

GARLIC CHEESE AND SEAFOOD? ill take it. 

SAUTEE:
heat olive oil, add in 3 cloves minced garlic, mushrooms, peas, onion, and shrimp. cook until shrimp are pink. 
BOIL:
pasta, al dente, about 7 mins.
PARMESAN CREAM SAUCE: 
on low heat, simmer:
1/2 cup white wine, 1/4 cup sour cream, 3.4 cup parmesan, juice of 1 lemon, until melted and thick. STIR CONSTANTLY. DO NOT BURN.
ADD ALL TOGETHER:
in a saucepan. simmer. season with salt, pepper, chives, fresh parsley.

"Mac n Cheese" with Sausage & Aspragaus

Try baking this version.

IN A GREASED BAKING DISH:

mix in 1 cup cooked fettucine or any pasta
1 bunch blanched asparagus
2 cooked sausages, sliced or balled

SAUCE: 
1.4 cup low fat sour cream 
1 cup mixed cheese [gouda, sharp cheddar, gruyere? or mozza, or feta, or swiss... pick 3!]
salt and pepper

TOP WITH:
crumbled crackers and parmesan, salt and pepper

BAKE:
400 F for 30 mins until top has browned

Fettuccine with Pesto, Olives, & Sundried Tomato

ARGHHH amazing. 

YOU NEED:
1 cup boiled fettucine
2 tablespoons prepared basil pesto
chopped sun dried tomato
chopped kalamata olives
a bit of pasta water to make sauce
salt and pepper

EASIEST PASTA EVER? yes. just boil, add to a saucepan and toss in the rest. to thicken if you want, add some parmesan cheese right before serving. 

German Pasta Fry

A German-influenced version of an easy pasta dish.

YOU NEED:
1 bunch asparagus [isuppose white aspraragus is more german but its GROSSSSS so I used green
3 pork bratwust, slices or pushed out of casing into balls
1 cup al dente pasta
1.2 cup beef broth, a bit of white wine would work too [Riesling, to keep it German!]
small roux [1 tbsp butter 1 tsbp flour] to thicken
mushrooms, sliced
a bit of garlic
lots of black pepper, and a bit of salt to season
fresh parsley

1. blanch asparagus and boil pasta, set aside.
2. in a saucepan, heat a bit of oil and add in sausage and veg
3. add garlic, seasoning, then pasta. add immediately beef stock, then roux to thicken, simmer on low heat until thick, 
4. taste sauce, add lots of black pepper, and some salt.
5. garnish with fresh parsley and maybe some cheese!

Croque Madame

YUM BEST BREAKFAST EVER.

YOU NEED:
2 slices bread
bechamel sauce
1/2 cup gruyere or emmental or swiss
2 large slices ham
1 egg
chives, salt, pepper

1. preheat oven to 400 F.
2. bread should be topped with prepared bechamel, ham, and cheese.
3. put another bread on and do the same. 
4. add more cheese, ham, and egg, and bake for 20 mins. 
5. add a fried egg and chives, salt and pepper.
 

Ham & Egg Salad

This is a very comforting and easy salad!
OPTIONAL: pasta, or potatoes.

YOU NEED:
1 peeled cucumber cut into chunks
4 plums tomatoes, seeded and cut into chunks
1 onion cut into chunks
150 grams sliced ham
3 hard boiled eggs, quartered
1 bell pepper, cut into chunks

DRESSING:
1/4 cup olive oil
1/4 cup vinegar
salt
pepper
a bit of garlic, paprika, and parsley

SCOTCH EGGS!

made in class. sinful, delicious.

YOU NEED:
6 hard boiled eggs
12 raw sausages, meat squeezed out [some king of pork, or breakfast sausage]
flour
more flour
egg
breadcrumbs

1. HARD BOIL EGGS!
2. squeeze out sausage out of casing.
3. coat eggs in flour, then make patties out of sausage. wrap around eggs, seal.
4. coat in flour, then egg, then breacrumbs.
5. fry [in a pan, or deep fryer]

Duchesse Potatoes

I HATE THESE. But, I learned the recipe in class so i will share for you [eeek] potato lovers.

YOU NEED:
1 kg boiled potatoes. peel them, chop into chunks [ we used yukon gold]
1.2  cup melted butter
 2 egg yolks
an egg wash [egg whites and water]
some nutmeg, salt and pepper.

1. boil potatoes. IMPORTANT: after draining, PUT THEM BACK IN THE HOT POT. without cooking, just the heat to dry them out. mine turned out flat because i didnt drain the moisture....
2. add in butter and egg yolks, mix, season with LOTS of salt, pepper, and nutmeg. you can add chives and garlic i suppose, whatever.
3. dump mixture into a piping bag [with edges, or else it'll look like dog poo] then, coat with a bit of egg wash.
4. make little towers on a baking sheet.
5. bake at 400 F for about 15 minutes until top has browned.

Extra Gooey Mac n Cheese

ohhh boy.
METHOD FOR CHEESE SAUCE:

  • Measure out equal amounts of butter and flour. [a roux]
  • Dice the butter into small cubes and melt it in a saucepan over low heat.
  • Once the butter is melted, begin whisking in the flour.
  • When all the flour is incorporated, continue stirring and cooking for a few minutes
  • If you're making a white or light-colored cheese sauce, keep the heat low so the roux doesn't brown.
  • If the roux is hot, the milk should be cool, but if the roux is cool, the milk should be hot.
  • Whisk the mixture until smooth, then add seasonings if you wish.maybe some nutmeg, maybe some garlic, maybe some pepper, but lay off the salt! cheese is salty enough,
  • Allow the sauce to simmer until it gets to the consistency you want, then strain out any seasonings.
  • Remove the pan from the heat and gently blend in the cheese. If the cheese doesn't seem to be melting, return the pan to very low heat, but watch it carefully and remove as soon as the cheese is melted.
WHAT KIND OF CHEESE?
all kinds, any kind, but keep in mind, some melt faster, some slower. 

IF TOO THICK, OR RICH: you can add milk, and reduce.

Cheesy Asparagus Chicken Wraps!

Oh yum! Really quick and easy to throw together. 

YOU NEED:
8 chicken filets, thin [like schnitzel]  or, turkey.
asparagus, blanched [partially cooked, boiled about 5 minutes]
cheese
seasoning
breadcrumbs

1. lay out chicken fillet.
2. blanch asparagus
3. cool slightly after draining.
4. put aspargus on one end of chicken, top with cheese, roll up.
5. dip in seasoning, then egg, then breadcrumbs
6. bake for 30-40 mins on a greased baking dish at 400 F

MORE SPECIFICALLY:
for a meditteranean style chicken, stuff with feta or goat cheese, and season with some lemon juice and oregano and garlic
for a french style, use gruyere, swiss or emmental cheese, and coat with dijon and tarragon
for something zesty, use blue cheese and BBQ sauce.
for a classic italian, stuff with mozza and even coat in tomato paste for a sort of chicken parmesan-style dish.
