Pizza Grilled Cheese

1. Get slices of bread, slather outsides with butter. 
2. fill with slices of buffalo mozzarella, pepperoni, basil, and tomato sauce. 
3. grill as you would a grilled cheese.

Greek Pita "Pizza"


A super easy and healthier way to satisfy your greek craving.

1. preheat oven to 400 F.
2. get a pita or naan bread, or just a pizza bread, and drizzle with olive oil, garlic, and oregano.
3. top with spinach, tomato, red onion, olives, and lots of feta cheese. finish off with ground pepper, a bit of rosemary is nice too.

NOTE: you can always add chicken, or even gyro or souvlaki meat!

4. bake for 20-30 mins until crisp.

Pita Pizzas


YOU NEED:
pita breads
an oven
tomato sauce
toppings
including cheese.

1. preheat oven to 400 F.
2. cover pita in tomato sauce and toppings, and cheese and herbs, lastly.
3. bake for 20-30 mins until browned.

ABOVE: 
SPICY SALAMI BBQ CHICKEN PIZZA:
a step up from boring meat-lovers.
Mix tomato sauce with a bit of spicy BBQ sauce. Top with BBQ or Buffalo chicken, Spicy Salami, Spicy Olives, Chili Oil, and Blue or Mozzarella or Sharp Cheddar cheese. 


BRUSCHETTA PIZZA:
Bruschetta mix and feta, or parmesan [your choice]


GRILLED VEGETABLE & GOAT CHEESE PIZZA:
Fry or grill vegetables with balsamic vinegar and garlic.
top pita with pesto or sun-dried tomato pesto, vegetables, and goat cheese before baking.


MIDDLE EASTERN PIZZA:
Season ground lamb with cumin, minced garlic, lemon juice, paprika, and sumac. 
Fry, drain fat, add minced onion and fresh parsley.
Top pitas with yogurt sauce or tomato sauce, then meat, tzatziki, feta or goat cheese, basil, tomato.


CLASSIC CAPRESE:
Herbed tomato sauce, cherry tomatoes, buffalo or bocancini mozzarella, fresh basil.


PESTO, CHICKEN, & FUNGHI:

Basil pesto as a base, Balsamic chicken and mushrooms sauteed, any other vegetables, and a bit of mozzarella or cheddar.


ROSEMARY CAPRESE:
no basil, just tomato, balsamic vinegar, mozzarella, and fresh rosemary.

Cauliflower Crust Pizza


Pizza is so good, but sooo fattening. But if you take out the bread... it's healthy food!!! CAULIFLOWER CRUST!

YOU NEED:
1 cup grated cauliflower. 
1/4 cup yogurt
1/4 cup cheese [i mixed parnesan and mozzarella]
1 egg
1 pinch each of thyme, oregano, parsley, and basil [dry]
2 cloves minced garlic
a pinch of salt.

1. squeeze out moisture from cauliflower with a paper towel, if necessary.
2. mix with seasonings, cheese, and egg.
3. preheat oven to 400 F. 
4. bake on parchment paper for 20-30 mins until top is browned.
5. top with pizza toppings, cheese, whatever, and bake for another 5 mins until done!

Buffalo Chicken Portobello Pizzas


"Pizza" and "Chicken Wings" without the guilt!

1. get portobello mushrooms, remove stems.
2. mix together 2 tablespoons bbq sauce and 2 tablespoons tomato sauce. 
3. grill or use leftover chicken. 
5. top mushrooms with sauce, top with chicken, blue cheese or mozzarella.
6. bake for 15 mins at 375 F.

Goat Cheese & Olive Portobello Pizza


Lose the carbs, use mushrooms, they're perfect for it!

1. Hollow out large portobellos. 
2. brush with garlicky tomato sauce, fill with goat cheese, top with olives and basil.
3. a slice of pepperoni is always cute.
4. bake for 25-30 mins at 350 F. 

PAIR WITH: red wine, of course. Malbec!

Easy Deep Dish "Pizza"


Nevermind making dough, just do this!

1. preheat oven to 300 F.
2. fry together peppers, mushrooms, garlic, and meat [if using] with tomato sauce and herbs.
3. set aside.
4. get french bread, hollow out middle.
5. put in tomato sauce mix, top with parmesan/mozzarella.
6. bake for 30-45 mins until top is browned.

Pizza Pasta


OH. MY. GOD.
Pizza and pasta, lightened up? The best of both worlds.

1. boil pasta or spaghetti squash, drain.
2. in a saucepan, heat 1 tablespoon olive oil. add meat [meatballs, italian sausage, salami or pepperoni and drain excess oil.
3. add bell peppers, spicy peppers or red pepper flakes, 3 cloves minced garlic, mushrooms, and zucchini.
OPTIONAL BUT RECOMMENDED: olives, chopped tomatoes.
4. add a can of tomato sauce. simmer until flavours are incorporated.
5. turn heat to low, mix in 1/4 cup grated mozzarella, provolone, cheddar, or a mix. 
5. serve on pasta or squash, top with parmesan cheese.

Okay, so make your pizza dough, or buy [see previous post]
CLASSIC CHEESY BREADSTICKS: top pizza dough with mozzarella, parmesan, a bit of oregano or parsley. bake for 45 minutes. serve with tomato sauce.
PESTO BREADSTICKS: pesto as a base, then cheese.
TOMATO BREADSTICKS: Cheese and slices of tomato
HERBED BREADSTICKS: Rosemary or parsley, and cheese

How To Make Pizza Dough

You NEED to master this.

YOU NEED:
1 1/2 cups warm water
2 tsp  dried yeast OR baking powder/soda
Pinch of sugar
 (4 cups) plain flour
1 tsp salt
60ml (1/4 cup) olive oil, plus extra for brushing

Method
Combine the water, yeast and sugar in a small bowl. Set aside for 5 minutes or until foamy. Combine the flour and salt in a large bowl and make a well in the centre.
 Add the yeast mixture and oil. 
Use a fork to gradually combine.
Use your hands to bring the dough together in the bowl.
Brush a bowl lightly with oil. Turn the dough onto a lightly floured surface and knead for 10 minutes or until smooth and elastic.
Should make dough enough for 3 pizzas. Use right away, or store in a bag in the freezer. 
If making pizza right away, add some flour and roll it out.

Pizza Chicken Breast

Who needs carbs?
1/ preheat oven to 400 F.
2.Get a chicken breast, lean.
3. cook for 20 minutes until semi-cooked.
4. top with tomato sauce [garlic, herb, make yourself or buy]
5. top with mushrooms and green peppers. pepperoni too?
6. grate or lay a slice on of mozzarella or cheddar.
7. bake for another 20 minutes until cheese has melted. 
8. serve with salad!

Pita Pizzas


Making pizza dough is time consuming. Even if you buy it, you still have to bake it. With pita bread, you can bake it in like 10 minutes, put it in a toaster oven, or even microwave it!

1. Get pita.
2. Put on pizza toppings.
3. Bake for 10-15 minutes until cheese is bubby [but watch out, pita can dry out fast] or microwave for 3-5 minutes to keep pita soft.


Arguably the best part? You can stuff pita, too! Much healthier than those damn pizza pockets, and you can fill with whatever you like.

IDEAS?


Meditteranean Pita Pizza: Whole tomatoes, olives, mushroom, and feta cheese with some oregano. Roasted Red Peppers and Zuchini also a good topping, or some greek-style chicken, sun-dried tomatoes, and you can even use HUMMUS, TAPENADE, or TZATZIKI as a base instead of tomato sauce. AMAZING.

Mushroom Melt Pizza: Use a cream sauce instead of a tomato base. with nice big juicy portabellos, and swiss cheese. basil goes great.

THE CLASSIC! Tomato sauce, ham or pepperoni, mushrooms, green onions, and lots of mozzarella, cheddar, or a mix of cheese.


MEAT LOVERS. Need I say more? Zesty tomato sauce, red peppers, mozzarella, and sausage, salami, hamburger meat, ham, whatever. lots of tasty meats.


Margharita: simply tomato sauce, tomatoes, mozzarella, and fresh basil.


Flammkuchen, or Alsacian Pizza, or Tarte Flambee. As you can see, you can use Naan bread or any flatbread as well. Alfredo or any cream sauce instead of a tomato base, thinly sliced sweet onion, and crispy bacon bits. lots of black pepper, and a bit of gruyere or emmental.

MORE PIZZAS?
Sundried tomatoes & Goat Cheese
BBQ sauce [instead of tomato sauce] chicken, and blue cheese
Mexican: fajita or taco seasoned meat, red and green peppers, some chili peppers, refried beans as the base, pimento or cheddar cheese
Veggie Lovers: Grilled peppers, zuchini, onion, and mushroom on an herbed tomato sauce base with cheese
BACON. Bacon, cheese. Try a BLT pizza by topping with fresh tomatoes and lettuce after baking.
Spinach, Artichoke & Asiago: on top of a white cream sauce base.
Teriyaki: teriyaki or hoisin sauce as base, peppers, shiitake mushrooms, green onion, chicken or beef. no cheese.
Hawaiian: i hate it. but you know, pineapple, ham, whatever. gross.
Breakfast pizza: scrambled eggs, cheese, and bacon!
Super Spicy: Hot Genoa salami, mozzarella, puttanesca sauce as base, some red chili flakes to top, or spicy garlic olive oil.
Parmesan: anything, doused in parmesan. try a chicken-parmesan pizza, or even veal.



The best part? MINI PIZZAS! buy those mini pitas and bring them to a party. soooo awesome. i'd be your best friend if you brought that to my party.

Caprese Everything!


The timeless and versatile combination of tomatoes, mozzarella, and fresh basil.

YOU NEED:
  • Good quality, firm tomatoes. Heirloom, Roma, cherry tomatoes
  • fresh full leaves of basil
  • good mozzarella, the real stuff. Buffalo mozzarella or bocancini.
For the classic caprese salad, stack each ingredient, then top with fresh basil, salt and pepper, and drizzle with olive oil or balsamic vinegar.


For a Caprese Panini, sandwich everything between 2 slices of foccacia, baguette, or ciabbata. Grill using a pan, panini-press, or charcoal grill pan. Hell, maybe you can even barbeque it. 
For a Pizza Margharita, use basic tomato sauce with mozzarella and basil.
For Caprese pasta, combine with pasta. You can use a pesto-based sauce, and serve it hot, or cold. 
As a snack or party food, skewer bocancini and cherry tomatoes and basil.



You can use as a topping for chicken, or stuff chicken with it. Bake the chicken with it on top, so the cheese melts. 
Finally, there are countless ways to dress up the combination.
