Bacon, Basil & Egg Salad

So easy and so good!
YOU NEED:
6 eggs, hard-boiled
4 strips bacon, fried and crumbled
a handful fresh chopped basil
2 tablespoons low fat sour cream
a bit of lemon juice
salt, pepper
OPTIONAL: green onion, celery, sun-dried tomatoes

Avocado & Salami Grilled Cheese

This is what I had for dinner :) throw everything together!

YOU NEED:
2 slices bread, outside buttered or olive oiled. 
1 avocado, sliced
some salami or pepperoni, sliced
cheese, sliced
cheese, think sliced or grated [mozza, gruyere, sharp cheddar, or a mix]
tomato paste or sauce

1. butter outsides or bread, tomato sauce inside.
2. put in cheese, avocado, salami.
3. fry in a pan until cheese is melty. mmmm.

Shrimp, Gruyere & Asparagus Quiche

This is one damn delicious quiche.

YOU NEED:
Semi cooked shrimp
semi cooked asparagus
gruyere, swiss or emmental cheese
sauteed onions and or mushrooms
eggs [3 for a quiche]
milk [1/2 cup for a quiche]
salt, pepper, nutmeg, any other seasonings

1. cook shrimp, asparagus [boil] set aside.
2. get pie crust. make or buy. bake for 10mins. 
3. grate cheese, sautee mushroom and onion.
4. season egg and milk mixture after whisking.
5. add together, bake until top is browned, about 30 mins.

Avocado Egg Salad

go away, mayo.

YOU NEED:

5 hard boiled eggs, mashed
2 avocados, mashed
2 celery, chopped
2 green onion, chopped
salt
pepper
lemon juice
paprika or any other seasonings

BBQ Pork & Cucumber Sandwich

Hot and cold sandwich. YUM!

YOU NEED:
BBQ pork, cooked in your favourite sauce
Cucucmbers, sliced
sharp cheddar
mayo

Scrambled Eggs with Herbed Croutons

Easy breakfast.

YOU NEED [for 2 or 3 people]
6 eggs [use half, or only egg whites if you're looking for a low fat and cholesterol friendly meal]
milk
2 slices stale bread
olive oil
garlic
salt, pepper, oregano, basil [dry]
chives as garnish
OPTIONAL: swiss, emmental, or gruyere
butter

1. warm butter.
2. add in eggs, scramble. once half-done, add in some milk.
3. fry up slices of bread in olive oil, dry oregano, basil, garlic. 
4. slice chives.
5. salt and pepper on eggs.
6. toss in croutons.
7. top with chives as garnish, and cheese is optional.

Vegetarian Taco Salad

VEGGIE TACO SALAD. So good.

YOU NEED:
taco seasoning
protein [beans, tofu, or seafood, fried in seasoning]
peppers, onion, also fried in seasoning
mixed greens or any lettuce
fresh onion
tomato
refried or soaked beans
cheese
sour cream, salsa, avocado to make a "dresssing"
hot sauce or chili pepper if needing spice

Shrimp, Feta & Coleslaw Fajitas

Mexican food. So easy, so good.

YOU NEED:

FOR SHRIMP:
shrimps, raw, peeled.
fajita or taco seasoning
onion and pepper, sliced, optional
veg oil to fry
lime juice to season

COLESLAW:
cabbage mix
onion, diced
cilantro
salt, pepper
mayo
lime juice
vinegar
to taste!

TOPPINGS? 
avocado
cheese!
sour cream
salsa!

My Signature Steak Fajitas! [simple version]


I go crazy for steak fajitas!

YOU NEED:
flour tortillas. corn is better for soft tacos.
steak, leftovers or fry up a new one
fajita seasoning
bell peppers
onion
jalapeno

TOPPINGS: 
cheese
cilantro
avocado
sour cream
salsa

1. rub steak with seasoning. fry.
2. with steak jus, fry onions and pepper with some garlic.
3. prepare toppings. 
4. serve hot!

Croque Madame

YUM BEST BREAKFAST EVER.

YOU NEED:
2 slices bread
bechamel sauce
1/2 cup gruyere or emmental or swiss
2 large slices ham
1 egg
chives, salt, pepper

1. preheat oven to 400 F.
2. bread should be topped with prepared bechamel, ham, and cheese.
3. put another bread on and do the same. 
4. add more cheese, ham, and egg, and bake for 20 mins. 
5. add a fried egg and chives, salt and pepper.
 

BALT salad

BLT, deconstructed!

YOU NEED:
2 plum tomatoes, chunked
8 slices bacon, chunked
2 avocados, chunked
lettuce, sliced
onion, olives, cheese optional
croutons
DRESSING: lime juice, a bit of cayenne seasoning, salt, pepper, olive oil

Garden Steak Sandwiches

A nice, lighter twist on the steak sandwich! Try serving at your next summer BBQ or whatever. 

MARINATE STEAK. A bit of lemon juice, garlic, and some fresh herbs should do the trick. salt and pepper.
PREPARE SALAD GARNISH: Arugula, Tomato, Basil, some lemon juice and olive oil
CHEESE? Mix light cream cheese with goat or feta.
BREAD? whole wheat, toasted.

Healthy Breakfast Sandwiches

Baked, healthy breakfast!

YOU NEED:
a bread [whole wheat english muffin or toast]
a veg [tomato, spinach, or pepper]
hard boiled eggs
salt and pepper
cheese

BAKE. for 10 mins. 

IDEAS? top english muffs with:

chicken, avocado, salsa, egg, monterey jack cheese
turkey bacon, egg, tomato, light cheese
tomato, a dab of hollandaise, egg, low fat ham
onion, roast beef, low fat cream cheesem dijon, egg

ETC. be creative and use good ingredients!

Chicken, Spinach & Mushroom Pizza

YOU NEED:
pizza dough [pre-made... what i go for]
cooked and chunked chicken breast
tomato sauce, garlicky!
mushrooms
spinach, chopped or not
emmental or swiss cheese

bake for 15t minutes until top has browned.

YUMMY. My best ever steak sandwich!

YOU NEED:
1 thin-ish steak
marinade: balsamic vinegar, worcestershire sauce, olive oil. fresh chopped rosemary, lots of minced garlic, salt and pepper
crusty bread
onions
mushroom
creamy goat cheese
mixed greens or arugula
sandwich spread: cream cheese, dijon, chives, lemon juice

Prepare steak, let rest for a few minutes, slice.
sautee onions and mushrooms at the same time with some olive oil, until caramelized
top sandwich with sandwich spread, greens, steak, goatg cheese, and caramlized onions/mushrooms
serve!

Easy Chicken Divan

The ultimate comfort food! 

you need:
1 broccoli chopped into florets, boiled slightly
2 to 3 chicken breasts, cooked.
1 can cream of chicken or mushroom soup, OR make your own sauce.... see below
a bit of lemon juice
 salt and pepper to taste, and any other seasoning.
bread cut into cubes
a bit of parmesan cheese

MAKE YOUR OWN SAUCE: 
Melt 1 tablespoon butter in a saucepan. add in some chopped mushrooms, maybe a bit of garlic and lemon juice, and finally some low-fat sour cream or skim milk. if too liquid, mix in a bit of flour, a roux, or some corn starch dissolved in water. season with salt and pepper. you could also add in a bit of healthy mayo. spices like curry powder or cayenne work nicely. 

1. preheat oven to 375 F. 
2. toss cooked broccoli and chicken in cream sauce, put in a greased casserole dish.
4. sprinkle with bread chunks, and finally, some parmesan cheese.

Easy Shrimp & Feta Salad

This will take you max... 20 minutes.

YOU NEED:

10 shrimps, peeled and deveined
a handful washed mixed greens or any lettuce
2 oz. crumbled feta, more or less
olive oil
salt pepper
oregano
garlic
tomato
cucumber
onion
bell pepper
lemon juice

1. chop veggies, toss salad with mixed greens, tomato, cucumber, onion, bell pepper.
2. toss with a bit of olive oil, salt and pepper, oregano, lemon juice
3. fry shrimp with garlic, olive oil, herbs
4 toss onto salad with feta.

Healthy Turkey BLT Wraps


BLT, lighter!

USE: 
Corn or lower-fat tortilla wraps
turkey bacon or veggie bacon
low fat or olive oil mayonnaise
lean turkey breast or slices
the rest is normal.... cheese [try cream cheese with dijon, amazing! or sharp cheddar], lettuce, tomato. yum!
easy, bring to work. lots of black pepper!

Bruschetta with Green Pesto & Goat Cheese


A twist on classic bruschetta!

1. get some baguette or french bread. slice into rounds.
2. top with pesto, and bake for 10 mins until warm and crisp.
3. top with goat cheese, tomatoes, fresh basil. also good? walnuts and fresh basil.

German Style Crepes


These are fluffier, thicker,  and less sweet than french crepes. They're also known as german pancakes. 

In a bowl, whisk together 1 cup all purpose flour [or half whole wheat] flour with 2 eggs until combined. 
Add in half a cup milk, 1/2 a cup water, and 2 tablespoons melted butter. add a bit of salt, just a pinch.

NOTE: for a slightly sweeter crepe, add in 2 tablespoons or more sugar, and some vanilla extract, but not much. 

Grease a pan, pour in about 1/4 cup worth at a time, cooking on one side for 2 mins until browned,  then flipping. This should make 8-10 crepes. 

If you're eating them right away, add ingredients to the cooked side, like cheese, ham, etc. But I prefer just making the whole batch and warming them up later with whatever ingredients I want.
