Mint Goat Cheese & Garlic Sauce

A great sauce to pair with lamb or any middle-eastern/meditteranean food, or even indian!

YOU NEED
1 cup greek yogurt
3 cloves minced garlic
a handful fresh mint, chopped
1/4 cucumber, chopped
salt, pepper, cumin

YOU NEED:

Portobellos. de-stemmed. 
Basil Pesto.
Boccancini, sliced
tomato chunks

BAKE! For 20 mins, or until cheese has browned.

Healthy Breakfast Sandwiches

Baked, healthy breakfast!

YOU NEED:
a bread [whole wheat english muffin or toast]
a veg [tomato, spinach, or pepper]
hard boiled eggs
salt and pepper
cheese

BAKE. for 10 mins. 

IDEAS? top english muffs with:

chicken, avocado, salsa, egg, monterey jack cheese
turkey bacon, egg, tomato, light cheese
tomato, a dab of hollandaise, egg, low fat ham
onion, roast beef, low fat cream cheesem dijon, egg

ETC. be creative and use good ingredients!

IDEAS?
kalamata olives
genoa salami
pepperoni
prosciutto
cherry tomatoes
pickled artichokes
grilled zucchini
cornichons
boccancini mozzarella
provolone
asiago
ham
green olives
spicy peppers
fresh basil

[basically go to your olive bar, and have a field day!]

Mini Tostadas

Oh yay! Tostadas are so easy. For these are bite-sized mini ones, simply pick up large-ish nacho chips. 
I guess these could also be called topped nachos.....

WHAT TO TOP WITH?

Fajita Chicken & Guacamole
Refried Beans, Sour Cream & Cheese
Salsa & Taco Beef
Shrimp & Tomato & Lime Juice [Ceviche]
Cheese & Spicy Salsa [Pimento]
Roasted Vegetables, Salsa, Cheese
3 Cheeses [Monterey Jack, Cheddar, Mozzarella
Avocado, Shredded Pork

ALWAYS TOP WITH CILANTRO!
and have salsa or other condiments for dipping.
