Easy Quesadillas!

WHAT YOU NEED AS BASICS

CHEESE
TORTILĿAS
an oven or frying pan.

sandwich it aŀŀ in and cook.

(choose to bake or fry, baking is easier and heaŀthier

CĿASSIC
cheese ¨(monterey jack, pimento or mozzareŀŀa) cooked taco meat, tomatoes, onion

3 CHEESE
mozzareŀa, goat cheese, parmesan

CREMA
sour cream, avocado, goat cheese

SPICY
chiŀi peppers, sour cream, monterey jack

ITAĿIAN
mozzareŀŀa, parmesan, basiŀ, tomato

FAJITA:
fajita seasoned beef or chicken, mozzareŀŀa, saŀsa

BURGER
cheddar, ground beef, onion, tomato and condiments

PIZZA
pepperoni, mozzareŀŀa, peppers, mushrooms, tomato sauce

VEGAN
bŀack beans, tomato, avocado

BRUSCHETTA
tomato, basiŀ, parmesan, crushed waŀnuts, garŀic

Leek, Bacon & Mushroom Quiche

Easy & Delicious quiche. You can omit bacon, it's just as good!

YOU NEED:
1 leek
1 onion
bacon or not
mushrooms
all chopped.
cheese: gruyere, swiss, or emmental, or mixed
3 eggs
1/2 cup milk
some nutmeg, salt, pepper
any other herbs you want... thyme, parsley, oregano...
1 pie crust

sautee bacon, add in leeks, onions, then mushrooms
blind bake crust according to directions, usually 10 mins
add filling.beaten eggs,  sprinkle with more cheese
bake for 30 mins or so.

Spinach, Arugula & Strawberry Salad with Parmesan and Walnuts

This little salad is easy and light and very summery!

YOU NEED:
spinach, arugula, or mesclun
ripe strawberries, sliced
crushed walnuts
some grated parmesan

olive oil
lemon juice
salt, pepper


that's it.

Ballantine Chicken

Easy, just stuffed chicken!

YOU NEED:
boneless chicken thighs or breasts
oil
filling

1. pound chicken with mallet to flatten it. 
2. make a filling.
3. roll, tie with string

FILLING?
Sauteed garlic spinach with goat cheese and toasted pine nuts
Sausage & Herbs
Feta & Garlic Sauteed Vegetables
Swiss Cheese & Ham
Fried Mushrooms, Cheese & Bacon
Broccoli & Cheddar
Tomato, Mozzarella, Basil

Za'atar





The middle-eastern spice mix of choice. Great to rub on meats, or on bread, and you can store the spice mix for up to 6 months. 

YOU NEED:
Ingredients:

1/4 cup sumac
2 tablespoons thyme
1 tablespoon roasted sesame seeds
2 tablespoons marjoram
2 tablespoons oregano
1 teaspoon coarse salt
1/2 teaspoon lemon zest


For example, mix with garlic and butter and spread on a pita or naan, and bake. delicious!

Ravioli From Scratch


Great because then you fill with whatever you like! Plus, it's really not hard.

YOU NEED:
  • 3 cups (375 g) all-purpose flour
  • 1/2 tsp. salt
  • 2 eggs
  • 1/4 cup (50 ml / 3½ tbs.) olive oil
  • 1/2 cup (120 ml / 8 tbs.) water
  • Extra flour on hand for dusting
METHOD:

  • Crack eggs into a large mixing bowl and beat them with a fork. Add the water, oil, and salt. Mix together.
  • Add 1 cup flour to the bowl. Use a fork to mix the flour with the eggs, water, oil, and salt. Repeat with the rest of the flour. Mix until a smooth dough is formed.
  • Clear and clean off a large work surface and dust it with flour. 
  • Take the dough out of the mixing bowl, shape it into a ball, and place it on your work surface. Knead for at least 10 minutes or until it becomes elastic-y. 
  • Dust a rolling pin with flour. Roll out the dough until it is about 1/8 inch thick. 
  • Cut shapes with either a cookie cutter, jar lid, or cut into squares. 
  • If you're not using the dough, you can freezer leftovers. 
  • Fill with filling, about a tablespoon depending on the size, dab edges with egg or water and seal shut with a fork. either fold over or fold in half. 
  • Boil ravioli for 5 or 6 minutes, they're done when they float! 


EASY, no?
