1. Slice zucchini, onion, mushrooms, and whatever other vegetable.
2. toss with 1/4 cup olive oil, salt, pepper, 3 or 4 cloves minced garlic, 1/4 cup lemon juice, 1/4 cup greek yogurt, and oregano.
3. top with feta cheese, crumbled, and bake for 25-40 minutes at 400 F.
