Meditteranean Bruschetta Asparagus


No need for bread!

1. Blanche asparagus [boil for 5 minutes]
2. meanwhile, chop 2 tomatoes. mix with 1/4 cup feta cheese, 1 tablespoon olive oil, 1 teaspoon lemon juice, 1 teaspoon balsamic vinegar, some fresh chopped oregano or rosemary, ground pepper, 2 cloves minced garlic. add more olive oil or lemon juice to taste if needed.
3. top asparagus, bake for 10 mins. 
4. serve hot, goes great with olives!
