Lemon & Garlic Butter Roasted Asparagus

*NOTE: this is vegan if you use olive oil instead of butter.

1. Trim off the stringy ends of the asparagus [breaking them off works better, since they'll break at the right spot]
2. boil them for 5 minutes until slightly tender.
3. preheat oven to 350 F.
4. mix together 1/4 cup melted butter, 4 cloves minced garlic, 2 tablespoons lemon juice, salt, and pepper. 
5. Drizzle on top, bake for 10 minutes, tossing around once. 

Eat as a side, or:

Arugula & Asparagus salad with Blue Cheese. Toss witth arugula and cheese, quite simply.
Asparagus & Cheddar Cheese Omelette
Teriyaki-Beef Wrapped Asparagus with extra soy sauce
Asparagus Linguine with Parmesan-Cream Sauce [Alfredo]
Barbeque Asparagus with Bacon & Goat Cheese
Asparagus Salad with Mandarin Oranges & Feta Cheese
Asparagus Crepes with Gruyere & Tarragon Cream Sauce

.... plus you can make sandwiches, quiches, pizza, whatever. asparagus is an amazing, delicious vegetable!
