1. In a food processor or with a mortar & pessel, mix together:
- 1 jar roasted red peppers, or roast them yourself
- 4 tablespoons extra virgin olive oil
- 1/2 teaspoon balsamic vinegar
- 1/2 cup fresh basil
- 4 tablespoons Parmesan cheese [optional]
- 3 cloves garlic
- 2/3 cup roasted pine nuts
- salt and pepper to taste
