Well Gorgonzola can be a little intimidating, but nothing takes the edge off like a good mac & cheese.
1. boil 1 cup pasta, drain.
2. preheat oven to 400 F.
3. grease a baking dish with a bit of butter.
4. toss pasta with 1/4 cup low fat sour cream, 1 tablespoon cream cheese, 1 or 2 cloves minced garlic, salt, pepper, 1/4 cup crumbled gorgonzola [or use half half if you aren't sure about gorgonzola, like mozzarella] and fresh parsley.
5. put pasta in baking dish, top with a bit more gorgonzola, breadcrumbs or crushed crackers, and black pepper.
6. bake for 30-45 mins until browned and bubbling.
