A lightened up rose sauce with seafood, mmm. serve on pasta or spaghetti squash, which is what i do.
1. heat a bit of olive oil. toss in shrimp, calamari, scallops, or a mix of all. cook with 2 cloves garlic.
2. add in mushrooms, basil, spinach, pepper, onion, or any vegetable if using.
3. once cooked, add in 1/2 cup tomato sauce and 1/2 cup skim milk. a bit of lemon juice. another clove or two garlic, thicken with corn starch or flour, about 1 tablespoon. salt and pepper to taste. vodka is optional.
4. simmer until ready, serve on pasta, spaghetti squash, or a mix. top with basil and parmesan.
