Pasta Salad, but stepped up!
1. prepare soba noodles. they're healthy, too! cool.
2. mix together 2 tablespoons sugarless peanut butter, 1 tablespoon rice vinegar, 1 tablespoon lime juice, a small piece of grated ginger, 1 clove minced garlic, salt, pepper, 1 tablespoon soy sauce, and some chili paste for spice.
3. toss noodles with dressing, add bok choy, red or green onions, lettuce, broccoli, peppers, or whatever other veggie. tofu for chicken for a full meal.
4. top with fresh cilantro and peanuts.
