Super Healthy Strawberry Kiwi Muffins


These are moist and delicious, don't use ANY butter or fat, and can be whole wheat!

1. preheat oven to 350 F. Line a muffin tin with papers.
2. in a bowl, mix together 2 cups flour [whole wheat, all-purpose, or half and half] with 1/2 cup sugar, a pinch of nutmeg, a bit of salt, 1 and a half teaspoons baking powder and 1/4 teaspoon baking soda. 
3. slice strawberries and kiwis into small chunks.
4. mix together 1 egg, 3/4 cup apple sauce, 1/2 teaspoon vanilla extract,  and fruits. 
5. mix in wet ingredients into dry ingredients until a batter forms. if too solid, add a bit more apple sauce or a bit of lemon juice. 
6. pour into muffin tins, about 3/4 of the way up.
7. bake for 15 minutes, check if done with a toothpick.
