Kale Salad with Thai Dressing


A very healthy salad. Peanuts add crunch and protein.

1. Toss Kale with some shredded carrots, red peppers, green onion, and peanuts.
2. make dressing: 1 tablespoon sesame oil with a small piece of grated ginger, 1 clove garlic, 1 tablespoon soy sauce, a bit of lime juice and some red chili flakes for spice. [for creamyness, omit oil and use peanut butter]
3. toss and serve!
