Merguez is the best sausage ever...it's a spicy lamb sausage, for those of you who don't know. go buy some, now!
Prepare a nice crispy baguette or french bread. You can finish the sandwich off in a panini press if you like.
grill or fry merguez sausages.
toss together arugula with 1/2 tablespoon balsamic, 1 tablespoon olive oil, 1 clove minced garlic, and 1 tablespoon sour cherry jam or compote.
optionally add goat cheese or feta.
sandwich and serve!
