Cold Spring Rolls with Thai Basil & Egg


Easy and super healthy finger food! 

1. dampen rice paper rolls with paper towel.
2. fry up 1 egg as an omelette. 
3. chop up thai basil or normal basil, carrots, cucumber, red peppers, green onion.
4. boil vermicelli noodles. 
5. slice egg into strips, fill and wrap rolls with all ingredients. 
6. serve with peanut-soy dip, or spicy thai chili dip.
