Soba & Vegetable Stir Fry

A healthy stir-fry using soba noodles [buckwheat noodles] so full of healthy carbs!

1. in a pan, heat 1 tablespoon sesame oil. add in snowpeas, chopped carrots, baby corn, bamboo shoots, red peppers, green or red onion, and whatever other veggie you like.
2. season with garlic, and chili sauce for spice.
3. boil soba until tender. drain.
4. add 1 tablespoon soy sauce, 1 tablespoon lime juice, 1 tablespoon peanut butter, a handful of fresh chopped cilantro, and a bit of fish or mirin sauce to veggies.
4. add in pasta, coat. once almost done, you can add some eggs if you want.
5. serve, topped with peanuts.
