Olives and goat cheese are amazing. Forfeit bland mozzarella and make this instead!
1. Slice tomatoes, a variety. Lay on a plate with chunks of goat cheese.
2. In a food processor, combine black olives with olive oil, garlic, salt, pepper, and a bit of oregano.
3. top salad with fresh basil and olive tapenade.
PAIR WITH: a dry Italian red wine.
