Camarones


A great way to cook shrimp. awesome for burritos, tacos, fajitas, on it's own, on rice, or even salad. 
1. Get shrimp, peel and stuff.  marinate for about an hour in 1/4 cup lime juice, 2 tablespoons olive oil, salt, pepper, 2 cloves minced garlic, with some cilantro and hot chili peppers. 
2. start frying them. add 1/4 cup adobo sauce and 1/4 cup crushed tomatoes or tomato sauce. onions and veggies are optional.
3. simmer for a while until shrimp are pink.
4. ready!

PAIR WITH: mexican beer or light Pilsener. If you're going for fajitas or burritos though, go for red wine [Sangiovese or Montepulciano] because they go best with tomato sauce.
