A great, flavourful Thai salad!
1. wash tomatoes, onions, lettuce, cucumber, papaya, peel. also: bell peppers and bean sprouts.
2. boil shrimp if using. drain and cool.
3. lay out a bed of lettuce.
4. shred papaya thinly. tomatoes, onion, peppers, any other veggie, chop.
5. toss vegetables in 2 tablespoons lime juice, salt, pepper, 1 teaspoon peanut butter, 1 teaspoon
sesame oil. 2 cloves minced garlic, shred 1 inch piece of fresh ginger, a dash of soy sauce and red chili flakes if you want spice.
6. lay out veggie mix on bed of lettuce, top with shrimp, crumbled peanuts, sesame seeds.
PAIR WITH: a nice cocktail! pina colada or blue hawaiian, sex on the beach, tequila sunrise.
