If you're not looking for a salad but still need a healthy side, here it is!
1. Slice Roma Tomatoes [they're less watery] in half and scoop out the gooey centre.
2. preheat oven to 300 F, or put on "broil" setting.
3. mix together 2 tablespoons olive oil, 1/4 cup crushed saltine crackers or real breadcrumbs, a bit of lemon juice, salt, pepper, 2 cloves minced garlic, oregano, parsley and/or basil.
4. top with grated parmesan, pecorino, or asiago works too.
5. bake for 20 minutes or so until cheese has browned.
6. drizzle with olive oil, serve.
PAIR WITH: I always like red wine with tomatoes in any form. A heavy red to contrast the light sweetness of the tomatoes, and accent the tangyness of the cheese.
