Is avocado a fruit or vegetable? Fruit I think. Anyways, it's super healthy. Plus these fries are baked, crispy on the outside, and moist on the inside.... just amazing. Who needs potatoes anyways?
1. get a firm-ish but ripe avocado.
2. pit, and slice.
3. dip in flour, then oil, then breadcrumbs [panko, always panko!] salt and pepper.
4. bake for 10 minutes at 400 F, flip, bake for another 10 until crispy.
5. serve with dip! salsa, aioli, whatever.
* goes great with parmesan cheese too.
