I make damn fine tzatziki. Just saying. When home-made, it always comes out way too watery... here's the fix.
1. 1 cup low fat greek yogurt.
2. 1 peeled cucumber. scoop out the watery middle before chopping, finely.
3. 2 tablespoons lemon juice.
4. 4 cloves minced garlic.
5. THE TRICK: 1 tablespoon cream cheese, low fat. makes it creamier without packing on tons of calories.
6. salt, pepper, oregano, dillweed to taste.
ANOTHER TRICK?
mix in some crumbled feta. so, so good.
