Sounds sinful, but a light dressing makes this salad totally okay.
1. fry bacon, slice tomatoes, slice an onion, toss with coleslaw mix or shred cabbage and carrots.
2. make dressing: mix together 1/4 cup low fat mayo OR just olive oil for a non-creamy version, 1 teaspoon celery seeds, salt and pepper, 1/4 cup white vinegar, 2 cloves minced garlic, 2 tablespoons sugar, 1 tablespoon dijon or plain yellow mustard.
*NOTE: you can add some flare by adding a bit of cajun or chipotle spices. instead of mayo, you can use avocado for a healthier creamy salad.
