Ramen, Sesame & Peanut Salad


1. boil ramen noodles, drain.
2. in a saucepan, heat 1 tablespoon sesame oil.
3. add green onions, 2 cloves minced garlic, 1 tablespoon rice vinegar,  1 inch piece of grated ginger,  1 tablespoon soy sauce, 1 teaspoon or more chili paste for spice. salt, pepper. and lime to taste.
4. add vegetables or meat if using. [broccoli, chicken, etc]
5. add noodles, and 1/4 cup chicken broth or vegetable broth, 2 tablespoons unsweeted peanut butter
6. add in noodles, stir until flavours are mixed.
7. top with sesame seeds, lime wedges, bok choy, cilantro, and chopped peanuts.
