Grilled Vegetable Meditteranean Salad





YOU NEED:
sliced zucchini, onions, bell peppers, eggplant, and tomatoes
garlic
lemon juice
balsamic vinegar
olive oil
salt, pepper
oregano

1. slice your veggies. skewer for BBQ, or lay in a baking dish for baking, or fry.
2. mix together 2 tablespoons olive oil, 2 tablespoons lemon juice, 3 cloves minced garlic, dry oregano, salt, pepper, and 1 tablespoon balsamic vinegar.
3. marinate in that for about half an hour, then cook, dousing in leftover marinade.
4. toss, top with feta or goat cheese! fresh parsley works wonders too.
