Enchiladas

OHHH. Like baked tacos. amazing!

1. heat oven to 400 F. grease slightly.
2. fry up meat or veggies or both in my taco seasoning [a couple posts back]
3. lay out tortillas ... i SWEAR by corn tortillas... legit.
4. wrap, lay in baking dish, cover with Salsa, tomato sauce, Chili sauce, any mexican sauce, and cheese. Cheddar or monterey jack or Colby.
5. bake for 20-30 minutes until cheese is nice and browned.
BAKE THIS.

6. serve, with avocado, fresh cilantro, and sour cream. 

WHITE ENCHILADAS:
cream cheese, sour cream, and grated cheese go on top, omit tomatoes, still delicious.
