Full of protein, healthy fat [which actually helps you lose weight] and great tasting.
1. toss together a base of tomatoes, onion, and lettuce [spinach, mixed greens, or arugula]
2. toast some pine nuts in a bit of olive oil, add.
3. chop up an avocado or two.
4. toss with a light vinaigrette, balsamic or lemon or even raspberry.
5. top with feta cheese, salt, pepper.
6. add chicken or shrimp for extra protein!
