Thai Mango & Avocado Salad



Step up the plain old mango salad! Vegan and super healthy, too. 

MAKE VINAIGRETTE FIRST:
1/4 cup lime juice
1 large clove minced garlic 
red pepper flakes for spice, or a bit of sriracha
1 tablespoon sesame oil
salt and pepper

GARNISHES?
Fresh cilantro, a lime wedge, crushed peanuts

SALAD: 
On a bed of mixed greens, slice:
1 green mango
1 red bell pepper
1 red onion
1 avocado
chop: fresh cilantro

voila!
