Greek Rice & Seafood Casserole


A nice hearty casserole combining all the greek flavours, baked and great for leftovers.

YOU NEED:
2 cups cooked basmati, long grain or wild rice
1 small finely chopped red onion
1 greased baking dish
1/2 cup greek yogurt
4 cloves minced garlic
1 handful fresh chopped parsley
1 tablespoon dry oregano
1/4 cup lemon juice
a teaspoon dill weed
10 or so peeled shrimps [omit, or use calamari, or even chicken if you don't like seafood]
feta cheese, crumbled
crushed saltine crackers or breadcrumbs or chunks of old bread
salt and pepper to taste

1. prepare rice.
2. preheat oven to 350 F.
3. grease baking dish.
4. mix rice with greek yogurt, garlic, lemon juice, half the parsley, oregano, and dill weed. 
5. put rice mixture in baking dish.
5. top with shrimp or whatever, breadcrumbs and feta cheese. a bit of pepper [feta cheese is salty enough]
6. bake for 40-45 mins until top is browned.
7. serve sprinkled with fresh parsley.
