Mexican Shrimp Gratin with Creamy Avocado Salad


2 in 1, but go great together!

1. in a bowl, marinade peeled raw shrimp in 1/4 cup lime juice, 1 tablespoons oil, 1 teaspoon cumin, 1 teaspoon paprika, 2 cloves minced garlic, 1/2 teaspoon cayenne, 1/2 teaspoon chili powder, salt, pepper to taste [or taco seasoning in a packet with lime juice, to keep it simple]
2. preheat oven to 350 F, grease a baking dish. 
3. put shrimp in dish, top with monterey jack, cheddar, mozzarella, or a blend of all 3. optionally add chopped onions, peppers. top with panko breadcrumbs or fresh made breadcrumbs. 
4. bake for 20-30 mins.

MEANWHILE:

chop up avocado, optionally you can add tomato, cucumber, peppers, and onion.
stir together 2 tablespoons sour cream with 1 tablespoon lime juice, a bit of cilantro, garlic, salt and pepper, and top salad. finish off with a pinch of cumin or paprika. 

serve together!
