Spinach & Goat Cheese Penne Salad


Bring this to your friends. Yummmmm. And healthy, too.

1. boil pasta and spinach, or use leftovers. Drain and cool.
2. Make pasta salad dressing: 1/4 cup low fat sour cream, 2 cloves minced garlic, 2 tablespoons crumbled goat cheese,  salt, pepper, and a bit of lemon juice. 
3. toss cooled spinach and pasta with dressing, fresh basil is optional, add 2 or so chopped tomatoes.
4. salt and pepper.
