Calamari, Tomato & Olive Salad


Soooo good. Calamari is a great way to add protein without fat or carbs. 

1. slice squid into rings, boil calamari until done, 5 mins or so. 
2. toss with tomatoes, cucumber, bell peppers, red onions, kalamata olives.
3. add 1 tablespoon olive oil, 1 tablespoon lemon juice, 1 clove minced garlic, salt, pepper, fresh parsley, and dill.


Serve, on a bed of lettuce!

PAIR WITH: a dry red or sweet white, depending on which you prefer, or, a heavy Pilsener.
