Baked Coconut Chicken with Sweet Chili Sauce


Nevermind boring plain chicken fingers, these are amazing! Baked or fried, but still a healthy alternative. 

1. get chicken breast, cut into strips. 
2. dip in flour, then coconut milk, then panko breadcrumbs mixed with shredded coconut.
3. bake for 30 minutes flipping once halfway through, or fry until golden.
4. meanwhile, make sweet chili sauce: 2 tablespoons honey, 1 tablespoon sesame oil, a bit of ginger and garlic, salt,pepper, a squeeze of lime, 2 chopped red chilis.
5. serve with sauce.
