chicken breasts, "butterflied" or sliced 3/4 through, so you have a pouch to fill it with.

METHOD:
1. butterfly chicken breasts.
2. fill with stuffing/filling. i'll get to that.
3. cook... NOTE: i like to fry it quickly to make the outside crisp, then finish it off in the oven for 30-40 minutes. make sure it's cooked through!

JALAPENO POPPER CHICKEN: stuffed with cream cheese, chopped onion, and jalapenos, breaded and fried.
ZUCCHINI & PESTO: sauteed chopped zuchini and basil pesto, glazed with balsamic vinegar, lenon juice, salt and pepper. cheese is optional.
CAPRESE CHICKEN: stuffed with tomato, fresh basil, and lots of mozzarella.
SUPER SPICY MEXICAN: stuffed with sharp cheddar or monterey jack, green onions, and habanero.
SUN-DRIED TOMATO AND HAM: sun-dried tomatoes, mayonnaise, ham or bacon
ITALIAN: Ricotta, spinach, tomato, glazed with pesto and lemon juice.
CORDON BLEU: Swiss cheese or Emmental, Ham, Cream sauce, breaded and fried.
GREEK: feta cheese, spinach, topped with garlic and lemon juice
