Shrimp & Peach Salad with Chili, Lime & Cilantro Vinaigrette


An asian-inspired salad, great for summer!

1. wash and dry mixed green salad. 
2. toss with vinaigrette: 1 tablespoon sesame oil, 1 small piece grated ginger, 1 teaspoon chili paste, 1 clove minced garlic, 1 tablespoon lime juice, 1 or 2 teaspoons brown sugar, and 1 teaspoon soy sauce. 
3. slice peaches, toss in with cooked shrimp. 
4. toss with fresh chopped cilantro.

Scalloped Potatoes


1. peel and slice potatoes into thin rounds. 
2. grease a baking dish and preheat oven to 400 F.
3. mix together 1 cup sour cream with 4 cloves minced garlic, parsley, 1 tablespoon lemon juice, and 1/4 cup shredded mozzarella/parmesan, salt and pepper. 
4. lay out potatoes, top with cream sauce, and repeat about 4 times to make layers in your saucepan. 
5. top with a final layer of sauce and grated cheese.
6. bake for 30-45mins until browned and bubbling.

Pizza Pasta


OH. MY. GOD.
Pizza and pasta, lightened up? The best of both worlds.

1. boil pasta or spaghetti squash, drain.
2. in a saucepan, heat 1 tablespoon olive oil. add meat [meatballs, italian sausage, salami or pepperoni and drain excess oil.
3. add bell peppers, spicy peppers or red pepper flakes, 3 cloves minced garlic, mushrooms, and zucchini.
OPTIONAL BUT RECOMMENDED: olives, chopped tomatoes.
4. add a can of tomato sauce. simmer until flavours are incorporated.
5. turn heat to low, mix in 1/4 cup grated mozzarella, provolone, cheddar, or a mix. 
5. serve on pasta or squash, top with parmesan cheese. 

Super Easy Pad-Thai Ramen


Whip this up for an easy dinner! 30 mins, max. 

1. Boil a package of plain ramen noodles.
2. heat a pan with 1 tablespoon sesame oil. toss in chicken or shrimp, then vegetables [snow peas, bean sprouts, red onion, carrots, peas, whatnot and brown.
3. add in 2 cloves minced garlic, 1 chopped chili pepper or 1 tablespoon chili paste, 2 tablespoons peanut butter, 1 tablespoon white or rice vinegar, 1 tablespoon soy sauce, and 1 tablespoon lime juice. 
4. toss to coat evenly, add noodles. 
5. serve, top with sesame seeds, fresh  basil or cilantro, & green onion and a wedge of lime.

"Fried" Mushroom Caps


An easy and delicious way to get your veggie fix!

1. get medium-sized mushrooms, remove stems.
2. preheat oven to 400 F.
3. mix together 1 tablespoon breadcrumbs, 1 tablespoon shredded cheese [parmesan and cheddar, or a delicious mix of anything with herbs.... details follow] 
3. coat mushroom caps with flour, then egg, then panko breadcrumbs
4. bake for 20-40 mins, turning once, crispy outsides.

FILLINGS: [chop or food processor]
Goat cheese, garlic, & sun dried tomatoes
Basil, mozzarella, & tomatoes
Provolone cheese, tomato sauce, basil, pepperoni or salami
Blue Cheese, chicken, BBQ sauce
Swiss cheese & Ham
Jalapeno & Taco meat & Cheddar
Prosciutto & Parmesan
Cranberry Jam & Turkey
Sharp Cheddar, Mustard & Roast beef
Bacon, Cheddar & Spinach
Feta, Roasted Red Pepper and Oregano
Yogurt, Cucumber, & Feta
Caviar, Goat Cheese & Tomato Sauce
Crab, fresh parsley & Asiago
Broccoli, Cheddar, & Bacon

White Tacos



These are sweeter and creamier than normal taco spice. But feel free to keep the heat!

1. seafood [shrimp] is recommended, but you can use chicken, just veggies, or any other meat. 
2. heat 1 tablespoon olive oil in a pan. 
3. add 3 cloves minced garlic, shrimp/meat/vegetables. I SUGGEST: shrimp, sweet corn, green bell peppers, and a finely chopped habanero for spice.
4. cook until done, add 1/2 cup milk and 1 tablespoon corn starch to thicken. add 1/4 cup finely grated parmesan and 1 tablespoon lime juice. 
5. simmer until thick.
6. serve on warm tortillas, with cabbage/coleslaw. 

Crispy Corn Flake Chicken Fingers


A GREAT way to use up that stale leftover cereal.

1. slice lean chicken breast into chunks or "fingers"
2. crush some leftover corn flakes. be creative! any leftover cereal [provided it's not cocoa puffs or reese's puffs.... eeeek.] but any neutral-ish cereal should work. You could even go as far as using honey or cinnamon flavoured. Up to you. 
3. coat chicken in flour and corn starch, mixed, with salt and pepper.
4. dip in some beaten egg.
5. coat in cereal, evenly.
6. bake or fry, until golden and crisp!
7. WAAAAY crispier than using normal breadcrumbs.
