Easy Shrimp & Feta Salad

This will take you max... 20 minutes.

YOU NEED:

10 shrimps, peeled and deveined
a handful washed mixed greens or any lettuce
2 oz. crumbled feta, more or less
olive oil
salt pepper
oregano
garlic
tomato
cucumber
onion
bell pepper
lemon juice

1. chop veggies, toss salad with mixed greens, tomato, cucumber, onion, bell pepper.
2. toss with a bit of olive oil, salt and pepper, oregano, lemon juice
3. fry shrimp with garlic, olive oil, herbs
4 toss onto salad with feta.

Rapini Pasta with Italian Sausage



Easy to stir together, a great pasta dish!

For 2 servings, you need
1 large italian sausage, insides squeezed out into balls
1 cup pasta, farfalle or penne or anything
1 bunch Rapini [those long broccoli things]
OPTIONAL: 
mushrooms
onion
peppers
tomato
olive oil
garlic
salt and pepper

1. boil pasta until al dente, about 6 mins. drain.
2. start by frying sausage chunks with olive oil with minced garlic. add in onions, mushroom, rapini, peppers.
3. stir until fragrant, add tomato chunks and pasta.
4. season with salt and pepper, and any italian herb.

Chicken Salad with Emmental & Apple

STILL GREAT.... omit chicken if vegetarian.

YOU NEED:
grilled chicken breast. this is sort of a french salad, so try seasoning/marinating with tarragon, lemon juice, mustard, white wine vinegar... etc. otherwise leftovers or plain salt and pepper will do.
lettuce, any kind
thinly sliced granny smith [sour] apples
walnuts
grated or cubed emmental cheese

DRESSING:
1 tablespoon dijon mustard [grainy is best]
2 tablespoon olive oil
1 tablespoon white wine vinegar
honey for a bit of sweetness, to taste. 
salt, pepper, a bit of tarragon or fresh basil, or oregano.... a bit of herb, you know.

The Extreme Caprese

NOTE: omit prosciutto if vegetarian. 

The classic caprese, stepped up.

COMBINE, TOSS, OR STACK
Tomatoes
Arugula or greens
Prosciutto
Buffalo Mozzarella or Fior di Latte cheese
sliced peaches or apricots

TOP WITH
green pesto, balsamic vinegar, salt and pepper as needed. 


Candied Pecan & Swiss Salad



YUM. Contrast bitter greens with sweet pecans!
YOU NEED:
Candied Pecans [  you can toast or bake them with some brown sugar]
arugula, mixed greens, baby romaine, whatever
cucumber
tomato
a light vinaigrette, simple, like olive oil and lemon juice
cubed swiss cheese [ emmental or gruyere works.... actually, feta cheese would be amazing. goat cheese too. sharp cheddar.... just don't go for blue cheese, or bland mozzarella. we want a sharp contrast]

Warm Garlic Mushroom & Emmental Salad


A simple salad.

Top rocket/arugula [or mixed greens, spinach too]
garlic mushrooms: sliced, sauteed with a tiny bit of olive oil and some minced garlic, salt and pepper.\
shredded or diced emmental [swiss or gruyere also good]
optional: a light mustard or sherry vinaigrette. [dijon is key]

Shrimp, Watermelon, Feta & Mint Salad



Looking for a low-cal salad? This one is filling too, i assure you.

YOU NEED:

for 1 portion, multiply accordingly for the amount of people needed:
6 shrimp, devein and peel.
1 cup mixed greens [arugula, baby spinach, baby romaine, frisee, endive, whatever]
1/2 cup chunks of watermelon and 1/2 cup diced tomatoes, onions optional
a handful chopped fresh mint\
a bit of crumbled feta
DRESSING: lemon juice, balsamic, olive oil, a bit of garlic.... be creative.

1. lay out a bed of salad.
2. toss with watermelon and tomatoes.
3. grill shrimp or fry.
4. add dressing and feta and mint.
5. serve.
