Healthy Breakfast Burrito


You can make these ahead and freeze them, too. 

1. Scramble eggs. to reduce fat, use 3 whole eggs and 5 egg whites [this should be enough for 6 burritos or so] season with salt and pepper. 
2. slice up bell peppers, red and green, onions, mushrooms. zucchini,  add jalapenos for spice, in taco seasoning [light]
3. for meat, you can use lean turkey or chicken sausage or ground meat, fried up.If vegetarian, you can boil some wild whole grain rice too. 
4. wrap up in whole wheat tortillas, with low fat cheese, cheddar or mozzarella. 
5. add tomato or avocado for extra goodness. 
6. warm up and serve, or freeze for later use.
