Creamy Basil Bruschetta Chicken


Super quick and delicious and healthy. You can even add it to pasta and salad!

1. Preheat oven to 400 F.
2. Cook chicken breast in lemon juice and minced garlic [marinate beforehand if you have time] for 10 minutes.
3. make sauce: simmer 1 tablespoon butter with 1/4 cup low fat sour cream, 3 tablespoons parmesan cheese, salt, pepper, 2 cloves minced garlic, 1 tablespoon lemon juice, salt and pepper. 
4. mix in fresh basil and chopped tomato, let simmer.
5. put sauce on top of chicken, cook for another 20 minutes or so. 
6. serve!
