Chorizo, Chickpea and Olive Salad


An absolutely amazing, protein-packed salad. 

1. Toss together chopped and cooked Chorizo sausage [spicy!] with some halved cherry tomatoes and a can of drained chickpeas. Add pitted Kalamata olives.  
2. consider adding chopped red bell peppers, or even a jalapeno. Feta cheese is also great on top.
3. make dressing: stir together 2 tablespoons olive oil, 1/4 cup lime juice, salt, pepper, 1 clove minced garlic, a bit of cumin. red pepper flakes for extra spice. 
4. toss with dressing and chopped cilantro and serve. 

PAIR WITH: cerveza, of course. Try to avoid the generic and bland Corona.
