My favourite sushi roll. Involving baked tempura shrimp, and spicy mayo.
TO MAKE HEALTHY TEMPURA:
1. get shrimp, vegetables, or whatever.
2. dip in flour/corn starch, then whipped egg, then panko breadcrumbs.
3. bake at 400 F for 40 minutes, flipping once halfway through. crispier, too.
THE VICKY ROLL.
1. prepare sushi rice. look at earlier posts for how.
2. lay out Nori [seaweed] on plastic wrap and bamboo roll-y thing. [get a sushi making kit, it's cheap]
3. mix together 2 tablespoons chili-garlic asian sauce or srirachra [you'll find it in any asian grocery, or even at your local] with 2 tablespoons low-fat mayo.
4. toss baked shrimp with mayo-spicy sauce.
4. put sushi rice on, 3 quarters till the edge. in a line, put: spicy shrimp, avocado, green onion, cucumber. add more spicy sauce if you want.
6. serve with wasabi and pickled ginger and soy sauce.
