Stuffed Mushrooms

Mushrooms are practically made to be stuffed.

SIMPLY:
Remove stem and filling, so you have a cup! I like using medium-sized mushrooms, Portabello are a little too big for my taste.
Fill, with a mixture of cheese, seasoning, whatever.
Bake!

Rosemary, Goat Cheese, and Red Pepper Pesto stuffed mushrooms. 
Leftover Tomato Sauce and Parmesan [use leftover spaghetti, lasagna, whatever sauce]
Reverse Garlic-Bread Mushrooms: Stuff mushrooms with garlic, parmesan, top with breadcrumbs and parsley! a bit of lemon juice before baking.


OTHER STUFFED MUSHROOMS?
CAPRESE MUSHROOMS: chopped tomato, fresh basil, mozzarella
BACON CHEDDAR STUFFED MUSHROOMS: fried bacon, cheddar cheese
PIZZA PORTABELLOS: use the mushroom as the crust, you get the idea.
SPANAKOPITA MUSHROOMS: spinach, feta cheese, garlic
PROSCIUTTO MUSHROOMS: Prosciutto, basil, parmesan cheese
JALAPENO POPPER MUSHROOMS: chopped jalapenos, pimento or monterey jack cheese, breadcrumbs
MEXICAN MUSHROOMS: taco beef, salsa, monterey jack or cheddar
CREAM OF MUSHROOM MUSHROOMS: Peas, cream of mushroom soup, mozzarella or parmesan
FRENCH ONION MUSHROOMS: Sauteed Onions, Gruyere
BUFFALO MUSHROOMS: bbq sauce, blue cheese, peppers.
